Honey-Sweet Onion Ribs

- 2 tablespoons brown sugar
- 1 - 2 tablespoons paprika
- 1 tablespoon garlic powder
- 2 - 4 teaspoons coarsely ground black pepper
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground cumin
- 3 1/2 - 4 pounds pork loin back ribs
- 1 tablespoon cooking oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 8 ounce can tomato sauce
- 1/3 cup pineapple rum or desired beer
- 1/3 cup light-flavored molasses
- 2 tablespoons Worcestershire sauce
- 2 tablespoons vinegar
- 2 teaspoons dry mustard
- 2 teaspoons chili powder
Fish Burgers with Dilled Slaw

- 1 1/2 pounds of fresh or frozen tuna and/or salmon fillets
- 1/4 cup of snipped fresh cilantro
- 2 tablespoons of lime juice
- 2 tablespoons of olive oil
- 1 tablespoon of pickled sushi ginger, finely chopped
- 1 tablespoon of Asian chili sauce
- 1 teaspoons of prepared wasabi paste
- 2 cloves of garlic, minced
- 1/4 teaspoon of salt
- 1/4 teaspoon of ground black pepper
- 3 pita bread rounds, quartered
- Green Cabbage Slaw

Cracklin' Chicken

Cracklin’ Chicken’s one of my favorite dishes, too
- 8 chicken thighs, bone-in, skin-on (approximately 4 pounds)
- 1 tablespoon Diamond Crystal kosher salt (remember, not all salts are the same!)
- 2 teaspoons ghee
- 2 teaspoons seasoning blend of choice (optional)
Slow-Cooked Minestrone

- 1 pound boneless beef chuck, cut into 1/2-inch cubes
- 2 14 1/2 ounce can diced tomatoes with basil, garlic, and oregano (undrained)
- 2 14 ounce can beef broth
- 1 15 ounce can cannellini beans, rinsed and drained
- 1 15 ounce can red kidney beans, rinsed and drained
- 1 cup thinly sliced carrots (2 medium)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup dried bow tie pasta
- 1 medium yellow summer squash, halved lengthwise and sliced
- Salt and freshly ground pepper
- Grated Parmesan cheese (optional)

Creamy Potato Soup

- 1 Tbsp. olive oil
- 2 cups milk
- 3 Tbsp. all-purpose flour
- 1 lb. Yukon Gold potatoes, peeled and sliced
- 4 cups reduced-sodium chicken broth
- 8 oz. Swiss-style cheese such as Gruyére or baby Swiss, shredded
- Snipped fresh herbs
- 2 oz. baby Swiss cheese, thinly sliced (optional)
Hearty Beef Stew

- 2 tbsp paleo cooking fat;
- 4 cups beef stock;
- 1 cup onion, chopped;
- 1 cup celery, chopped;
- 3 carrots, peeled and chopped;

- 1 28oz can diced tomatoes;
- 1/2 tsp fresh rosemary, finely chopped;
- 1/2 tsp fresh thyme, finely chopped;
