Grilled Steaks with Gorgonzola Butter

- 4 boneless beef top loin steaks, cut 1 inch thick (about 2 pounds total)
- 2 tablespoons crumbled Gorgonzola or blue cheese
- 2 tablespoons soft onion-garlic cream cheese
- 1 - 2 tablespoons butter, softened
- 1 tablespoon chopped pine nuts or walnuts, toasted
- Salt
- Thinly sliced fresh basil or chopped parsley
Pineapple Pork Chili

- 1 16 ounce jarpineapple salsa
- 1 15 ounce canred kidney beans, rinsed and drained
- 1 8 ounce cantomato sauce
- 1 tablespoon chili powder
- Pineapple slices (optional)
Cauliflower Pizza Crust

This was actually pretty good - the best non-grain crust we have tried
- 1 cup cooked, riced cauliflower
- 1 egg
- 1 cup mozzarella cheese
- 1 tsp oregano
- 2 tsp parsley
Chipotle Steak & Tomatoes

- 2 6- to 8-oz. beef shoulder petite tenders, or 2 6- to 8-oz. beef ribeye steaks
- Salt and ground black pepper
- 1 canned chipotle pepper in adobo sauce, finely chopped plus 2 tsp. adobo sauce
- 1/4 cup olive oil
- 1/4 cup vinegar
- 3 medium (1 lb.) tomatoes, cut in thick slices
- 2 medium avocados, halved, pitted, peeled and sliced
- 1/2 of a small red onion, very thinly sliced (1/2 cup)
Chicken Breasts in Sun-Dried Tomato Sauce

Very tasty!!
- 25 oz. boneless, skinless chicken breast or chicken thighs
- 1 1/2 oz. sundried tomato halves, quartered (about 12) (2 carb)
- 1 1/2 cups onion, cut in thin half moons (1 carb)
- 2 cups mushrooms, thinly sliced (1 carb)
- 1/2 cup dry white wine (1 carb)
- 1 tablespoon olive oil
- 3 garlic cloves, coarsely chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon herbs de provence or italian herb blend
Grilled Turkey with Spiced Almond Butter

very good - I made the turkey breast option & cooked in the oven
- 1 10 - 12 pound fresh or frozen whole turkey
- 1/2 cup butter, softened
- 1/2 cup finely chopped slivered almonds or chopped pine nuts
- 1/3 cup snipped fresh parsley
- 1 teaspoon finely shredded lemon, orange or tangerine peel
- 4 teaspoons lemon, orange or tangerine juice
- 2 large cloves garlic, minced
- 1/2 teaspoon ground allspice or ground ginger
- 1/2 teaspoon freshly ground black pepper
Berry Truffle Pie

- Pie Crust:
- 2 Tablespoons cocoa powder
- 1/2 cup raw cashews
- 1/2 cup shredded unsweetened coconut
- 1/2 cup pitted dates - give or take...
- Pie Filling:
- 2 1/2 cups frozen strawberries or other berries
- 1/4 cup + 2 2 Tablespoons cocoa powder
- 1 1/2 cups cashews, soaked overnight
- 1/2 tablespoon vanilla
- 1/3 cup coconut oil
- 1/4 cup agave
Coconut Pumpkin Soup

- 2 medium carrots, chopped
- 1 medium green sweet pepper, seeded and chopped
- 1 medium onion, chopped
- 1 tablespoon vegetable oil
- 1 15 ounce can pumpkin
- 1 14 ounce can unsweetened light coconut milk
- 1 14 ounce can reduced-sodium chicken broth
- 2 tablespoons packed brown sugar
- 1 medium fresh jalapeno chile pepper, seeded and finely chopped
- 3/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 2 tablespoons snipped fresh cilantro or parsley
Twice-Baked Potatoes

- 2 large Yukon Gold potatoes (about 1 pound)
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 3 tablespoons milk
- 2 tablespoons butter or margarine
- 2 tablespoons dairy sour cream
- 1 tablespoon snipped fresh chives
- 1/4 cup finely shredded Gruyere or Swiss cheese (1 ounce)
- Salt
- Ground black pepper
- Snipped fresh chives (optional)
Southwestern Shredded Beef Sandwiches

Very good - ate as a sandwich but had the meat by itself the next day & it was super good
- 1 cup chopped onion (1 large)
- 1 Tbsp. cooking oil
- 2 cups Shredded Beef Master Recipe (see recipe below)
- 1 10-oz. can diced tomatoes and green chiles
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 Tbsp. chopped fresh cilantro
- 1/2 cup shredded cheddar or Monterey Jack cheese (2 ounces)
- 4 onion rolls, split and toasted, if desired
- 1 cup shredded lettuce
