Turkey Steaks with Spinach, Pears & Blue Cheese

- •4 to 5 teaspoons lemon juice or white vinegar

- •4 teaspoons hot water
Beef Brisket

- Davis Dry Rub:
- 6 - 8 hard wood chunks such as mesquite or hickory
- 1/2 cup Davis Dry Rub (see recipe below)
- 1 5 pound fresh beef brisket
- 1/2 cup paprika
- 1/3 cup black pepper
- 1/4 cup salt
- 1/4 cup chili powder
- 1/4 cup ground cumin
- 1/4 cup packed brown sugar
- 3 tablespoons granulated sugar
- 2 tablespoons cayenne pepper
- Directions:
- 1 . In a small bowl stir together paprika, black pepper, salt, chili powder, cumin, brown sugar, granulated sugar, and cayenne pepper. Transfer to a small airtight container or bag. Store at room temperature up to 6 months
Sweet Potato Casserole

Haven't had this yet but it sounds like a lighter, less sugary version of the original
- Casserole:
- 2 1/2 pounds sweet potatoes. peeled & cut into 2-inch chunks
- 2 large eggs
- 1 tablespoon canola oil (coconut oil)
- 1 tablespoon honey
- 1/2 cup low-fat milk
- 2 teaspoons freshly grated orange zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Topping:
- 1/2 cup whole-wheat flour
- 1/3 cup packed brown sugar
- 4 teaspoons frozen orange juice concentrate
- 1 tablespoon canola oil (coconut oil)
- 1 tablespoon butter, melted
- 1/2 cup chopped pecans
Chocolate Sour Cream Cake with Fudgy Frosting

- 1-1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup shortening
- 1-1/4 cups sugar
- 1 tsp. vanilla
- 3 oz. bittersweet chocolate, melted and cooled
- 1 8-oz. carton dairy sour cream
- 1 cup milk
- 1 recipe Fudgy Frosting
Pumpkin Cheesecake Cupcakes

Preheat your oven to 350 degrees and put muffin cups in 2 12 count trays
- 1/2 large can pumpkin
- 16 oz. mascarpone cheese
- 5 eggs
- 3 scoops vanilla protein powder. It MUST be vanilla. My favorite is Optimum Nutrition 100% Casein.
- 3 T cinnamon
- 1/2 t nutmeg
- 1/2 t ground ginger
- dash of allspice
- 1/2 stick of butter
- 2 c. pecan meal
- 1 T maple syrup
- 1/2 c. heavy cream
- 1.5 c. chocolate chips, 85% or above
Tomato Mozzarella Toss

This tomato mozzarella toss is perfect on top of baguette slices or great for a small snack all you need is a fork!
- 4 cups grape and/or cherry tomatoes, halved
- 1 (8-ounce) container fresh pearl-size mozzarella cheese or fresh mozzarella cheese, chopped
- 1/4 cup small fresh basil leaves
- 3 tablespoons olive oil
- 3 tablespoons white wine vinegar or white balsamic vinegar
- 1 tablespoon snipped fresh basil
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Peppered Pork with Chive Sauce

- 1/2 - 1 teaspoon Asian chili sauce (Sriracha) sauce or crushed red pepper
