  • 6 - 8 hard wood chunks such as mesquite or hickory
  • 1/2 cup Davis Dry Rub (see recipe below)
  • 1 5 pound fresh beef brisket
  • 1/2 cup paprika
  • 1/3 cup black pepper
  • 1/4 cup salt
  • 1/4 cup chili powder
  • 1/4 cup ground cumin
  • 1/4 cup packed brown sugar
  • 3 tablespoons granulated sugar
  • 2 tablespoons cayenne pepper
  • Directions:
  • 1 . In a small bowl stir together paprika, black pepper, salt, chili powder, cumin, brown sugar, granulated sugar, and cayenne pepper. Transfer to a small airtight container or bag. Store at room temperature up to 6 months
