Ingredients

  • 4 cups grape and/or cherry tomatoes, halved
  • 1 (8-ounce) container fresh pearl-size mozzarella cheese or fresh mozzarella cheese, chopped
  • 1/4 cup small fresh basil leaves
  • 3 tablespoons olive oil
  • 3 tablespoons white wine vinegar or white balsamic vinegar
  • 1 tablespoon snipped fresh basil
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preparation

Step 1

In a serving bowl combine tomatoes, cheese, and basil leaves.

In a screw-top jar combine oil, vinegar, snipped basil, garlic, salt, and pepper; cover and shake well.

Pour over tomato mixture; toss gently to coat.
