Good Greens Soup

- 2 leeks, trimmed, halved, and sliced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 3 14-oz. cans vegetable broth
- 1 14.5-oz. can diced tomatoes with basil, garlic, and oregano
- 4 cups coarsely shredded kale
- 2 medium zucchini, halved and sliced
- 1 5-oz. pkg. baby spinach
- 1/2 cup chopped Italian parsley or basil
- 2 Tbsp. red wine vinegar
Warm Chicken Salad with Oranges and Almonds

- 2 medium oranges
- 6 cups torn romaine
- 1 medium red sweet pepper, cut into bite-size strips
- 1/2 of a small red onion, halved and thinly sliced
- 1/3 cup slivered or sliced almonds, toasted
- 1 pound skinless, boneless chicken breast strips for stir-frying or 1 pound skinless, boneless chicken breast halves, cut into thin bite-size strips
- 1 tablespoon olive oil
- 1/3 cup orange juice
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon-style mustard
- Coarsely ground black pepper
Coconut-Macadamia Bark

- 6 ounces white baking chocolate, chopped (1 cup)
- 1 tablespoon shortening
- 1 1/2 cups macadamia nuts, chopped
- 1 1/2 teaspoons finely shredded lime peel
- 3/4 cup flaked coconut, toasted*

Broccoli Bacon Salad

- 1 large head broccoli, chopped (peel & chop stems too)
- 1/8 cup sweet onion, finely chopped
- 4 slices good quality bacon, cooked & chopped
- 1/4 cup unsweetened dried currants
- 3-4 Tbsp raw sunflower seeds
- 1 Tbsp apple cider vinegar
- 2 Tbsp extra virgin olive oil
- 2-3 tsp full-fat coconut milk (I like this brand or this brand)
- 1/4 tsp raw honey
- 1/8 tsp mustard powder
- Himalayan sea salt and pepper to taste

- 1 15 - 19 ounce can cannellini beans (white kidney beans), rinsed and drained
- 2 small green sweet peppers, seeded and cut into bite-size chunks (1-1/2 cups)
- 1 medium cucumber, cut into bite-size chunks (3 cups)
- 1/2 head radicchio or 1/4 head red cabbage, coarsely chopped (2 cups)
- 1/2 16 ounce package radishes, halved or quartered (1-1/2 cups)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Honey (1 Tbsp.)
- Coarse Salt (1/2 tsp.)
- Cracked black pepper (1/4 tsp.)
- 8 ounces feta cheese, cubed
- Coarsely chopped fresh Italian parsley and/or mint
