Carrot and Chili Pepper Soup

Yummmmm! Next time - don't totally, blend, leave a little chunky & Rick suggested less cream but I liked it as is
- 2 14-1/2-ounce cans vegetable broth
- 16 ounce packaged peeled baby carrots
- 1 large onion
- 1 4-ounce can diced green chili peppers
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 cup half-and-half or light cream
- Fresh purple basil leaves (optional)
Raspberry Creme Brulee

Barbacoa Tacos on Jicama Shells

You can't go wrong with these barbacoa tacos on a jicama shell
- SHELLS:
- 1 jicama
- BARBACOA:
- 3 pounds brisket
- 4 cloves garlic
- 3 limes
- 3 to 4 chipotles in adobo plus sauce from can
- 1 teaspoon ground clove
- 1 bunch cilantro
- 1/2 teaspoon cinnamon
- 1/2 red onion
- 1/4 teaspoon cayenne pepper
- 1 teaspoon oregano
- 1/2 tablespoon salt
- 2 teaspoon tomato paste
- 1/4 cup apple cider vinegar
- 3 cup beef broth
- 3 bay leaves
- SALSA:
- 1 large tomato, diced
- 1/4 cup red onion, diced
- 1/2 finely minced jalapeño
- 1 clove garlic, minced
- Juice of 1 limes
- 2 tablespoons chopped cilantro
- Salt and pepper to taste
- GUACAMOLE:
- 1/2 diced red onion
- juice of 1 lime
- flesh of 2 ripe avocados
- 1 garlic clove minced
- 1/2 finely minced jalapeno, seeds removed
- some salt and pepper to taste
Chicken Enchilada Bake

- coconut oil, for greasing baking dish
- 1 pound cooked, shredded chicken (I used a rotisserie chicken)
- 1 (14 ounce) can El Pato enchilada sauce
- 1 (6 ounce) can of diced green chiles
- 1 orange bell pepper, seeded and diced (or any color you like)
- 1/4 red onion, diced
- 2 garlic cloves, minced
- 1/4 teaspoon chili powder
- 1/4 teaspoon dried oregano
- salt and pepper, to taste
- 3 eggs, whisked
- cilantro, to garnish
- goat cheese, to garnish (optional)
Garlic Pork and Sweet Potato Hash

- 3 smallsweet potatoes, scrubbed and chopped (4 cups)
- 1 1/2 pounds pork tenderloin (cut in 1-inch slices)
- 2 tablespoons reduced-sodium soy sauce
- Ground black pepper
- 8 clovesgarlic, peeled and thinly sliced
- 3 tablespoons cooking oil
- 2 green onions, sliced
- 2 tablespoons honey
Tri Tip Marinade

This makes enough marinade for about 2 lbs of meat - Yum
- 1/4 c red wine
- 1 T red wine vinegar
- 1 T oil
- 1 T Worcestershire Sauce
- 1/2 T Soy Sauce (coconut aminos)
- 1/2 T chopped garlic
- 1 T spicy mustard
- 1 t salt
- 1/2 t pepper
Lemon Pepper Tuna

- 4 fresh or frozen tuna steaks, cut 1-inch thick (about 1 pound)
- 2 tablespoons lemon juice
- 1 teaspoon reduced-sodium soy sauce
- 1 teaspoon snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
- 1/2 teaspoon salt-free lemon-pepper seasoning

- 2 cups chopped broccoli
- 1/2 cup packaged coarsely shredded fresh carrots

- 1 8 ounce package cream cheese, cut up
- 1 cup shredded provolone cheese (4 ounces)
- 2 ounces cooked ham, finely chopped
- 1/2 cup pitted Kalamata and/or green olives, rinsed, drained, and chopped
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning, crushed
- 1/4 teaspoon crushed red pepper (optional)
