- 2 Tbsp. cooking oil
- 2 lb. beef stew meat, cut into 1-inch cubes
- 2 tsp. dried thyme or oregano, crushed
- 6 medium carrots, peeled and quartered
- 4 stalks celery, cut in 2-inch lengths
- 2 medium onions, cut in 1/2-inch slices
- 6 cups lower-sodium beef broth
- 1/3 cup all-purpose flour

Ranch Deviled Eggs

- 4 jalapeno peppers
- 4 small roma tomatoes, halved
- 8 hard-cooked eggs, peeled and halved
- 1/2 cup plain Greek yogurt
- 2 tablespoons snipped fresh cilantro
- 1/4 cup thinly sliced green onions
- 1 - 1 oz. pkg. ranch salad dressing mix
- 3 tablespoons olive oil
- 4 garlic-stuffed green olives, sliced (optional)
Chicken and Broccoli with Creamy Dressing

this was very tasty. Next time - some walnuts would be good & try to use a healthier mayo or alternative
- 1/2 cup light mayonnaise dressing or salad dressing
- 2 tablespoons cider vinegar
- 4 cups broccoli florets or packaged shredded broccoli (broccoli slaw mix)
- 16 oz. cooked chicken or turkey
- 2 small red apples, chopped
- 4 slices bacon, crisp-cooked, drained, and crumbled; or 2 tablespoons cooked bacon pieces
Easy Chocolate-Almond Croissants

- 1/2 8 ounce can almond paste, cut into small pieces
- 1/4 cup whipping cream
- 4 ounces dark baking chocolate, chopped
- 1 8 ounce package refrigerated crescent rolls (8 rolls)
- 1 egg, lightly beaten
- 1 tablespoon water
- 1/4 cup sliced almonds
- 1 tablespoon powdered sugar
Baked Sweet Potato and Chile Wedges

These were very tasty & easy
- 3 1/2 lb. sweet potatoes (5 to 6 large)
- 2 Tbsp. olive oil
- 1 tsp. sea salt or 3/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1/2 cup orange juice
- 3-1/2 tsp. chili powder
- 1 Tbsp. honey
- 1 8-oz. carton dairy sour cream
- 1/3 cup snipped fresh cilantro
Chili-Rubbed Drumsticks

- 1 Tbsp. chili powder
- 1 Tbsp. finely shredded lime peel
- 1-1/2 tsp. ground cumin
- 1/2 tsp. salt
- 6 small turkey drumsticks (8 to 12 oz. each)
- Bottled salsa or barbecue sauce (optional)
Thanksgiving Maple Roasted Brussels Sprouts & Butternut Squash

- 4 cups halved brussels sprouts
- 3 cups peeled and cubed butternut squash
- 2 gala apples, cubed
- 1/4 cup melted ghee, butter, olive oil or coconut oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary, chopped
- a couple hefty pinches of salt
- 1/3 cup pecans
- 1/4 cup apple juice sweetened cranberries
- 3 tablespoons maple syrup
- 1 tablespoon olive oil
- zest of 1/2 lemon
- juice of 1 lemon
- crushed black pepper, to garnish
- flake salt, to garnish
Fish Tacos with Cabbage & Chile Pepper Slaw

- Tacos:
- 1-1/2 lb. fresh or frozen cod or halibut fillets, thawed and cut into 1-inch pieces
- 2 fresh tomatillos, cut into 1/2-inch pieces (2 cups)
- 2 tsp. olive oil
- 1 clove garlic, minced
- 1/2 tsp. finely shredded orange peel
- 1/2 tsp. finely shredded lime peel
- 12 6-inch corn tortillas
- Slaw:
- 5 oz. green cabbage, thinly shredded (1-1/4 cups)
- 1/2 cup thinly sliced red onion
- 1 poblano or pasilla pepper, halved crosswise, seeded and thinly sliced
- 1 carrot, peeled and shredded
- 1/4 cup chopped fresh cilantro
- 3 Tbsp. olive oil
- 2 Tbsp. freshly squeezed lime juice
- 1 Tbsp. freshly squeezed orange juice
