- 11 oz. Cream Cheese, softened
- 3/4 cup Sugar
- 8 oz. Crushed Pineapple, drained
- Grated rind & juice of 1 small Lemon
- 1 cup shredded Coconut
- 1 cup Whipped Topping

Preheat oven to 375 degrees
- 1 Cup All-purpose Flour
- 1 Cup plus 2 Tbs. Sugar
- 3 1/2 tsp. Baking Powder
- 3/4 tsp. Salt
- 2 Cups Graham Cracker Crumbs
- Peanut Butter to taste (at least 1/2 cup; if using more, decrease shortening by equal amount)*
- 3/4 Cup Crisco Shortening
- 1 Cup plus 2 Tbs. Milk
- 1 1/2 tsp. vanilla
- 3 eggs
SPICY SOUTHWEST BARBECUE SAUCE

Cut off pointed end of Garlic Bulb; place Garlic on a piece of aluminum foil and drizzle with olive oil
- 1 Garlic Bulb, unpeeled
- 2 tsp. Olive Oil
- 2 cups Ketchup
- 2 Celery Ribs, chopped
- 1 cup Water
- 1/2 chopped Onion
- 1/2 cup firmly packed Brown Sugar
- 1/2 cup Butter or Margarine
- 1/2 cup Worcertershire Sauce
- 1/2 cup Cider Vinegar
- 2 to 3 Tbs. Chili Powder
- 2 tsp. Instant Coffee Granules
- 1 1/2 to 2 tsp. Dried Crushed Red Pepper
- 1/2 tsp. Salt
- 1/2 tsp. Ground Cloves
