Crock Pot Chicken W/ Black Beans and Cream Cheese

1 Take 4-5 boneless chicken breasts (frozen or thawed) and put into crock pot
- 4 -5 boneless chicken breasts
- 1 (15 1/2 ounce) can black beans
- 1 (15 ounce) can corn
- 1 (15 ounce) jar salsa, any kind
- 1 (8 ounce) package cream cheese
- A little Cumin
- Maybe some RoTel Tomatoes and Green Chilis or jalepenos to spice it up a bit.
Roman-style Chicken

Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper
- 4 skinless chicken breast halves, with ribs
- 2 skinless chicken thighs, with bones
- 1/2 teaspoon salt, plus 1 teaspoon
- 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped
- 1 (15-ounce) can diced tomatoes
- 1/2 cup white wine
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/4 cup chopped fresh flat-leaf parsley leaves
Pineapple-Coconut Mahi-Mahi

Preheat oven to 425. Grease a baking pan, place filets in bottom of pan
- 4 Mahi-Mahi Filets
- 1 15 oz can pineapple
- Bakers Coconut
- Nutmeg
- Ground Allspice
- Salt
- Pepper
Mom's Potato Salad

Boil cubed potatoes until they are tender
- 5 large red potatoes, peeled and cubed
- 2 ribs celery, chopped
- 1/2 large onion, chopped
- 3 hard-boiled eggs, chopped
- 2 heaping tablespoons sweet pickle relish, drained
- 1/2 cup Mayo
- 3 tablespoons yellow mustard
- 1 tablespoon sugar (or more to taste)
- Paprika, for garnish
- Salt to taste
America's Test Kitchen Skillet Baked Ziti

1 Adjust oven rack to middle position and preheat oven to 475
- 1 tablespoon olive oil
- 6 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- salt & fresh ground pepper
- 1 (28 ounce) can crushed tomatoes
- 3 cups water
- 12 ounces ziti pasta (3 3/4 cups)
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/4 cup fresh basil leaf, minced
- 1 cup mozzarella cheese, shredded
- I haven't made this yet, but lots of reviews making additions (browned hamburger, italian sausage, etc...). Looks VERY versatile.
Carrot Soup

Melt butter in a medium saucepan
- 2 tablespoons butter
- 1 onion, chopped
- 1 tablespoon chopped garlic
- 2 apples, peeled, cored, and diced
- 4 carrots, peeled and cut into 1/4-inch pieces
- 1 cup white wine
- 1 quart chicken stock
- 1 teaspoon cumin
- Salt and freshly ground black pepper
- Chopped chives, as garnish
Pie Crust - 2

- 2 Cups Flour
- 1 Cup Butter/margarine
- 1 Egg
- 1 TBSP vinegar
- Water to equal 1/2 Cup
- 1/2 tsp Salt

Grandma's Onion Rings (Southern Style)

1.Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 375 degrees F (190 degrees C)
- 1 quart oil for frying, or as needed
- 2 cups all-purpose flour
- 2 teaspoons salt, divided
- 2 teaspoons ground black pepper, divided
- 3 egg whites
- 1 cup milk
- 1 tablespoon white vinegar
- 3 large sweet onions, peeled and sliced into thick rings
Pesto - Cilantro

In a food processor or blender, combine the cilantro, pine nuts, and garlic, and puree on high speed
- 2 cups tightly packed fresh cilantro leaves
- 1/4 cup lightly toasted pine nuts
- 1 teaspoon chopped garlic
- 1/4 cup grated cotija, queso fresco, or Parmesan
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 6 tablespoons olive oil
