Chicken Tikka Masala

1. Soak bamboo skewers in water
- 1 1/2 lbs boneless skinless chicken, cut in 1 inch cubes
- Marinade
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground red pepper
- 2 teaspoons black pepper
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 piece minced ginger (1-inchinch" long)
- 6 bamboo skewers (6-inchinch")
- Sauce
- 1 tablespoon unsalted butter
- 2 garlic cloves, minced
- 1 jalapeno, minced
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garam masala (buy in Indian market)
- 1/2 teaspoon salt
- 1 (8 ounce) can tomato sauce
- 1 cup whipping cream
- 1/4 cup chopped fresh cilantro

King Ranch Casserole

This king of all casseroles gets a punch of great flavor from picante sauce, chili powder and green onions
- 1 Stir the soup, picante sauce, sour cream, chili powder, tomatoes and chicken in a medium bowl.
- 2 Place half the tortillas in a 2-quart shallow baking dish. Top with half the chicken mixture. Repeat the layers. Sprinkle with the cheese.
- 3 Bake at 350°F. for 40 minutes or until the mixture is hot and bubbling. Sprinkle with the green onion. Serve with additional picante sauce and sour cream.
Beef Stew

Position rack in center of oven; preheat to 325°F
- 4 pounds boneless beef chuck, cut into 1-inch cubes
- 2 tablespoons peanut oil
- 4 thick-sliced bacon strips, chopped
- 3 cups finely chopped onions
- 3 garlic cloves, finely chopped
- 1 teaspoon dried thyme
- 1 bay leaf
- 5 1/2 cups canned beef broth
- 1 14 1/2-ounce can crushed tomatoes with added purée
- 3 tablespoons cornstarch
- 6 medium carrots, peeled, cut diagonally into 1-inch pieces
- 3 medium potatoes, peeled, cut into 3/4-inch pieces
Whipped Cream & Orange Splash

Combine first two ingredients in an ice-filled shaker

Pesto - Parsley

- 2 cups fresh curly parsley leaves
- 1/2 teaspoon granulated sugar
- 1/2 cup olive oil
- 1 cup thinly sliced scallions, green and white parts

Mahi-Mahi with Orange Beurre Blanc Sauce

- Marinade and fish:
- 2 fresh limes
- 8 (6-ounce) mahi-mahi fillets
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup tequila
- 2 tablespoons canola oil
- 2 tablespoons butter
- Orange Beurre Blanc Sauce:
- 1 cup orange juice
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1 tablespoon very finely chopped fresh parsley leaves
- 4 tablespoons (1/2 stick) butter, cut into cubes
