Three Potato Gratin

Preheat the oven to 400 degrees
- 1 tablespoon unsalted butter
- 2 heads garlic, halved
- 1 quart cream
- 1 pound peeled white potatoes, 1/4-inch slices
- 1 pound peeled sweet potatoes, 1/4-inch slices
- 1 pound red potatoes, 1/4-inch slices
- 2 cups grated Parmigiano-Reggiano, plus 2 tablespoons for garnish
- Salt and white pepper
- Essence, recipe follows
- 2 tablespoons chopped chives
Meg's Vegetable Salad

- Dressing:
- 1 (16 oz.) can of French green beans
- 1 (16 oz.) can of Shoe Peg corn (whole white kernel)
- 1 (16 oz.) can of petite sweet peas
- 1 cup celery, chopped
- 1 red onion, chopped
- 1 green pepper chopped
- 1 (2 oz.) jar pimiento chopped
- 3/4 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup vegetable oil
- 1/2 teaspoon pepper
- 1 teaspoon kosher salt
Black Bean & Couscous Salad

In a large bowl, combine couscous, beans, corn, onion, peppers and cilantro
- 1 Cup Couscous, prepared as instructed
- 1 can Black beans
- 1 cup thawed frozen corn (or canned corn)
- 4 green onions, sliced
- 1 Red bell pepper, diced
- 1 jalepeno, finely chopped
- 1/4 cup cilantro, chopped
- Dressing
- 3 TBSP EVOO
- 3 TBSP Lime Juice
- 4 TBSP Red wine vinegar
- 1 tsp Cumin
- Salt and pepper to taste
Italian Chicken and Vegetable Soup

In a large Dutch oven, heat olive oil over medium-high heat
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pounds)
- 1 small onion, chopped
- 1 cup sliced carrots (about 3 small)
- 2 1/2 cups sliced zucchini (about 2 medium)
- 2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
- 2 (14.5-ounce) cans chicken broth
- Grated Parmesan Cheese - Optional
Slow Cooker Coconut Pork Curry

1.In a large skillet, heat the oil
- 2 tablespoons vegetable oil
- 4 pounds boneless pork shoulder, cut into 2-inch pieces
- Salt and freshly ground pepper
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 tablespoons minced fresh ginger
- 1 tablespoon mild curry powder
- 1 tablespoon ground cumin
- 1/2 teaspoon ground turmeric
- One 14-ounce can diced tomatoes
- 1 cup unsweetened coconut milk
- 3 cups chicken stock or low-sodium broth
- Steamed rice, chopped cilantro and sliced scallions, for serving

- 1 1/2 lbs russet potatoes
- 1/4 cup half and half
- 2 oz unsalted butter
- 3/4 tsp kosher salt (or more to taste)
- 1/4 tsp freshly ground black pepper
- Milk or Sour Cream to achieve consistency, as needed
- Filling:
- 4 slices bacon
- 1 TBSP vegetable oil
- 2 Medium onions, chopped
- 1/2 tsp salt, plus 1/2 tsp
- 1 tsp Sugar
- 1 lb ground Lamb
- 3 Medium Carrots,roughly chopped
- 3/4 cups frozen peas, thawed
- 2 garlic cloves, minced
- 2 TBSP tomato paste
- 1 TBSP all-purpoase flour
- 1 Cup Red Wine
- 1/2 cup beef broth
- 1 tsp finely minced fresh rosemary leaves (or 1/2 tsp dried)
