Black Bean & Couscous Salad

Ingredients

  • 1 Cup Couscous, prepared as instructed
  • 1 can Black beans
  • 1 cup thawed frozen corn (or canned corn)
  • 4 green onions, sliced
  • 1 Red bell pepper, diced
  • 1 jalepeno, finely chopped
  • 1/4 cup cilantro, chopped
  • Dressing
  • 3 TBSP EVOO
  • 3 TBSP Lime Juice
  • 4 TBSP Red wine vinegar
  • 1 tsp Cumin
  • Salt and pepper to taste

Preparation

Step 1

In a large bowl, combine couscous, beans, corn, onion, peppers and cilantro.

In a small bowl, combine all dressing ingredients and whisk until completely combined.

Pour dressing over couscous mixture and stir well.

Chill and serve.
