Chili Lime Fish Fry

Season the fish with salt and pepper
- 4 tilapia fillets
- Kosher salt and freshly ground black pepper
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup bread crumbs
- 2 limes, zested and juiced
- 2 tablespoons chili powder, a couple of palmfuls
- 2 teaspoons garlic powder, 2/3 palmful
- 2 teaspoons onion powder, 2/3 palmful
- 2 tablespoons fresh chopped thyme leaves or 2 teaspoons dried
- 1/4 cup vegetable, canola or safflower oil
Creamy Corn and Vegetable Soup

Put 2 cups of the corn and the milk into a blender or food processor, until smooth
- 4 cups fresh corn kernels or 2 (10-ounce) packages frozen, thawed
- 2 cups nonfat milk
- 1 tablespoon olive oil
- 1 large onion, diced (about 2 cups)
- 1 medium red bell pepper, seeded and diced (about 1 cup)
- 1 medium zucchini, (about 1/2 pound) diced
- 2 cups low-sodium chicken or vegetable broth
- 2 plum tomatoes, seeded and diced
- 3/4 teaspoon salt
- Freshly ground black pepper
- 1/2 cup fresh basil leaves, cut into ribbons
Bacon -Herb Wrapped Pork Tenderloin

Preheat oven to 300 degrees F
- 1 head garlic, top sliced off
- 2 tablespoons olive oil
- 2 pork tenderloins (about 1 to 1 1/2 pound each) trimmed of excess fat
- Salt and freshly ground black pepper
- 1 tablespoon chopped fresh rosemary leaves
- 12 fresh sage leaves
- 1 tablespoon chopped fresh thyme leaves
- 12 (1/4-inch thick) slices bacon
- 2 tablespoons olive oil
DiBiase Meatloaf (gluten-free)

Preheat oven to 350 degrees F
- 1 Tbs olive oil
- 1 1/2 cups onion, minced
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk
- 2 tsp dijon mustard
- 1 tsp hot sauce (Louisianna hot sauce)
- 1/2 teaspoon dried marjoram
- 1/2 tsp dried thyme
- 1 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 2 lb Hamburger
- 1 cup gluten-free bread crumbs (panko style works well)
- 1/4 cup fresh parsley, minced
- 1 cup ketchup
- 1/3 + cup light brown sugar
- 3 Tbs cider vinegar
Candied Carrots (slightly modified)

Sangria - DiBiase Style!

We absolutely fell in love with the Sangria Rioja mix from Williams-Sonoma, but they stopped carrying it
- 2 Cups Red Wine (preferrably something fruity... a sangiovese works great)
- 2 Cups Sparkling Wine (The cheaper the better... we like to sweeten it up by using Ballatore)
- 1 3/4 Cups Cran-Raspberry Juice
- 1/4 Cup Limeaid
- Juice of One Orange
- Lime and orange slices to throw in the pitcher
Tuna Noodle Casserole

Put oven rack in middle position and preheat oven to 375°F
- 1 medium onion, finely chopped
- 4 1/2 tablespoons unsalted butter
- 10 oz mushrooms, trimmed and sliced 1/4 inch thick (4 cups)
- 2 teaspoons soy sauce
- 1/4 cup Sherry
- 1/4 cup all-purpose flour
- 2 cups low-sodium chicken broth
- 1 cup whole milk
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon salt
- 1 (6-oz) can tuna in olive oil, drained
- 6 oz dried curly egg noodles (preferably Pennsylvania Dutch style; about 3 1/4 cups)
- 1 1/2 cups coarse fresh bread crumbs (from 3 slices firm white sandwich bread)
- 4 oz coarsely grated Cheddar (1 cup)
- 1 tablespoon vegetable oil

- 1 (12-ounce) bottle light or dark beer
- 1/2 cup beef broth
- 1 teaspoon finely minced fresh rosemary leaves

- 1/2 cup grated Swiss or Cheddar
- 2 tablespoons chopped fresh parsley leaves
Cheese Strata (Gluten Free)

Preheat oven to 350°F. Butter a 9 x 13 baking dish and arrange the bread slices in one layer on the pan
- 8 slices gluten-free bread
- 1 cup diced gluten-free smoked ham
- 1/4 cup chopped green onion
- 1/4 cup diced green or red peppers
- 2 cups grated mild cheddar or Swiss cheese (reduced fat cheese may be used)
- 6 eggs, lightly beaten
- 1 cup milk
- 1 tablespoon gluten-free Dijon mustard
- Salt and pepper to taste
