Irish Potatoes (and Easter Eggs)

These candies are a contemporary magazine recipe, with slight modification (source not known)
- (a single batch fits nicely in a Kitchen-Aid mixer bowl;
- it makes 3 dinner-plate trays, one layer deep)
- 2 lbs powdered sugar ("#10" powdered) 3 3/4 cups
- 1/4 lb butter (1 stick - do NOT substitute margarine)
- 8 oz cream cheese (do NOT substitute fat-free or lowfat)
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla
- 1 lb coconut (10-12 oz works fine - omit to make
- (shredded, sweetened) 'plain' butter cream candies)
- cinnamon (takes about ?? oz for one batch)
Carvel "Crunchies" and Ice Cream Cake

Freeze springform pan with wax paper over the bottom
- Easy Ice Cream cake:
- 4 quarts of your favorite ice cream (2 flavors).
- One box Oreo Cones or one container Oreo crumbs
- One container Magic Shell (chocolate)
- One container Cool whip
- One 9" spring form pan with wax paper on the bottom (if you can find wax covered cake bottoms those rock - I can't find them so I make do).
Onion Soup

slice onions and put in pot to saute and brown
- 2 large bermuda or sweet onions, sliced, browned in 1/2 oil and 1/2 butter
- 1 tsp sugar sprinkled on during the saute
- 6 cups water
- 6 large tsp of chicken or beef boullion crystals
- french bread
- swiss or guyere cheese
Reese Cup Brownies

make brownies mix according to package directions
- 1 box dunkcan hines double fudge brownie mix
- 1 bag mini reese cups
Zucchini Gratin

Preheat the oven to 400 degrees F
- 6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
- 1 pound yellow onions, cut in 1/2 and sliced (3 large)
- 2 pounds zucchini, sliced 1/4-inch thick (4 zucchini)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1 cup hot milk
- 3/4 cup fresh bread crumbs
- 3/4 cup grated Gruyere
Sweet Potato (Yam) Casserole With Marshmallows

Spray 1 quart baking dish with Pam
- 1 (40 ounce) canbruce cut yams, drained
- 1 ⁄2 cup brown sugar
- 1 ⁄4 teaspoon salt
- 1 ⁄2 teaspoon cinnamon
- 1 egg, beaten
- 4 tablespoons melted butter
- 1 (16 ounce) bag miniature marshmallows
Sangria

Place fruit in glass pitcher, pour wine over fruit and add sugar to taste
- 1 lemon, sliced thin
- 1 orange, sliced thin
- 1 peach, peeled and left whole
- 2 plums, cut in half
- 12 grapes, cut in half
- 1 quart red wine
- sugar optional
Hot Jezebel

Combine all ingredients. Makes a lot, keep covered in refrigerator for several months
- 1 18 ounce jar apple jelly
- 1 18 ounce jar pineapple or apricot preserves
- 1 5 ounce jar horseradish
- 1 ounce dry mustard
- 1 tbsp. freshly ground black pepper, optional
Chocolate Chip Biscotti

1. make cookie dough blending cookie mix, butter, egg, flour, 1 1/2 cups chocolate chips until stiff dough forms
- 1 pouch betty crocker sugar cookie mix
- 1/3 cup butter or maregarine, softened
- 1 egg
- 1/4 cup gold medal all purpose flour
- 1/2 cup toasted chopped hazelnuts
- 1/2 cup cherry-flavored dried cranberries, coarsely chopped
- 2 cups semi sweet chocolate chips
Carmellas Blueberry Muffins

Sift flour, baking powder, salt and sugar
- 2 cups sifted flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar
- 1 egg, well beaten
- 1 cup milk
- 6 tbsp melted shortening
- 2 cups berries
- 1 tbsp sugar
