Sausage and Zucchini Boats

Boil Zucchini in salted water until tender
- Zucchini
- 1/4 lb. sausage
- 1 small onion, chopped
- 1/2 cup parmesan cheese
- 1 egg, slightly beaten
- 1/4 tsp. salt
- 1/4 tsp. thyme
- pepper and garlic salt
- 1/2 cup, cracker crumbs
Rose's Apple Cake

Mix all ingredients together and pour into greased pan
- 2 cups flour
- 2 cups sugar
- 1/2 cup brown sugar
- 2/3 cup melted butter
- 2 cups diced apples
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- pinch of salt
- 2 ripe bananas
- 2 cups milk
- 2 cups of beaten eggs
- Mix Topping
- 1/2 cup brown sugar
- 1 cup chopped pecans
- 1/3 cup cinnamon
Provolone and Pancetta Stuffed Chicken Breasts

In fry pan over medium-high heat, warm 1 tsp
- 1 tsp. plus 1 1/2 cups olive oil
- 6 oz. pancetta, cut into 1/4" dice
- 2 garlic cloves, minced
- 1 tbs. minced, fresh sage
- 5 boneless, skinless chicken breast halves, ea. about 8 oz., pounded 1/2 in. thick
- salt and freshly ground pepper, to taste
- 3 oz. aged provolone cheese, grated
- 1 cup all-purpose flour
- 4 egg whites, lightly beaten
- 3 1/2 cups toasted bread crumbs
Toll House Pie

Beat the eggs until foamy
- 2 eggs
- 1/2 cup of flour
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1 cup of melted butter
- 1 6 oz. pkg. chocolate chips
- 1 cup of walnuts
- 9 " unbaked pie crust
Banana Cake

Mash bananas and add 1 tsp
- 2 9" pans
- 3/4 cup crisco
- 1 1/2 cups sugar
- 2 eggs
- 1 1/2 cups bananas (4-5)
- 1 1/2 tsp. baking soda
- 2 1/2 cups flour
- 1 tsp. salt
- 3/4 cup sour milk
- 1 tsp. lemon juice
- 2 tsp. vanilla
- Butter Icing
- 1/4 lb. butter
- confectioner sugar
- vanilla flavoring
Chocolate Peanut Butter Eggs

Mix all into large bowl-chill 1/2 hr
- 8 ozs. graham crackers,crushed (2cups)
- 1 lb. conf. sugar
- 1/2 lb. margarine (soft)
- 2 tsp. vanilla
- 12 oz. smooth peanut butter
Baked Bananas

Combine the butter, sugar and lemon juice in a shallow baking dish
- 4 tbs. butter
- 2 tbs. brown sugar
- 2 tbs. lemon juice
- 4 ripe bananas
- 2 tbs. brandy
Blueberry Bars

Bake ate 350 degrees for 45 minutes
- Mix as if for pie crust:
- 2 1/2 cups flour
- 1 tsp. salt
- 1 cup margarine
- Beat and add:
- 1 egg yolk (save white)
- Milk to make 2/3 cup
- Divide dough in half-roll out 1/2 on 17X12" jelly roll. Sprinkle bottom dough with crushed cornflakes
- Filling: (4 cups of blueberries)
- Bring 1 cup blueberries crushed and add 1/4 cup water to a boil and add 1cup sugar, 3 tbls. tapioca and a dash of lemon juice. Cook until thick-add 3 cups of blueberries. Spread on dough. Roll out top
- After baking, frost with:
- 1 cup conf. sugar
- 1 tsp. vanilla
- 1 tbls. hot water
- Mix well
Chili Con Carne

Preheat fry pan to 325 degrees
- 1 tbs. butter
- 1 lb. ground beef
- 1/2 cup chopped onions
- 1 303 can red kidney beans (undrained)
- 1 10 1/2 oz. can tomato soup
- 1 small can tomato paste
- 1 tsp. salt
- 1 1/2 tsp. chili powder

- 1 pkg. (9 oz.) angel food cake, cut into cubes (sugar
- free at Kroger)
- 3 tbs. orange juice
- 1/4 tsp. almond extract
- 2 1/2 cups cold, fat free milk
- 2 pkg. (4 serv. size each) Jello Vanilla Fat Free, Sugar
- Free. instant pudding
- 1 1/2 cups thawed Cool Whip, sugar free, divided
- 2 pkg. (12 oz. each) frozen mixed berries, thawed and
- well drained......fresh
