White Chicken Chili

Put all ingredients in a crock pot (except sour cream & cream cheese)
- Hour before serving, add:
- 3 C. Chicken Broth
- 4 Cans Great Northern Beans, drained
- 4 Cans Chicken, undrained
- 2 medium Onions, chopped (or 2/3 c. dried onions)
- 2 (4 oz.) cans Green Chilis OR 2 fresh Anaheim Chilis
- 2 t. Salt
- 1 t. Pepper
- 3 t. Garlic Powder
- 2 t. Cumin
- 1/4 t. Cayenne Pepper
- 2 t. Oregano
- 1 cup sour cream
- 1 block cream cheese
Sweet & Sour Chicken

Place frozen chicken breasts in a pam-sprayed 9x13 pan
- 5 Frozen Chicken Breasts
- 1/4 C. Brown Sugar
- 1/2 C. Ketchup
- 1 T. Worcestershire Sauce
- 1/4 C. Onion, chopped
- 1 t. Salt
- 3/4 C. Water

- 1-1/2 pounds fresh green beans, trimmed
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup grape tomatoes, halved
- 1/2 small red onion, sliced
- 2 tablespoons grated Parmesan cheese
Dip - Guacamole

Scoop out avocado from skins and mash in a bowl with a fork
- 2-3 medium avocados (when I diced them, I got about 1 1/4 C)
- 1 T Fresh lime juice
- 1 t. fresh minced garlic
- 2 T finely minced onion
- 1/4 c. Sour Cream
- Salt (and pepper if you like) to taste
- Optional: 3-4 T finely diced tomatoes (If I happen to have them I add them, if I don’t, I don’t!)

- 1 pound ground pork
- 1/2 cup chopped onion
- 1 teaspoon minced garlic
- 1 jar (15 ounces) marinara or spaghetti sauce
- 1 cup frozen pepper strips, thawed and chopped
- 3/4 cup Beef Broth, divided
- 1-1/2 teaspoons dried parsley flakes
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon rubbed sage
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- 2 teaspoons cornstarch
- 1/2 cup ricotta cheese

Combine ingredients. Microwave until warm & creamy
- 1 pkg. Caramels
- 8 oz. Cream Cheese

- For the CRUST mix together:
- 1 cup Butter, slightly softened
- 1/2 cup Powdered Sugar
- 2 cup Flour
- Dough will be crumbly, not sticky. Spray sides only of a cookie sheet & press dough in. BAKE 350° for 15 min.
- For the FILLING beat together:
- 4 tablespoons fresh lemon juice
- Grated rind of 2 lemons
- 2 drops yellow food coloring
- 4 eggs
- 4 tablespoons flour
- 2 cup sugar
- 1 teaspoon baking powder
- Pour over warm crust and put back into the oven for 20 minutes. Until slightly golden on top.
Baked Ziti

- 1/2 pound dried ziti
- 15 or 16 ounces ricotta cheese (part skim)
- 3 cups (or 12 ounces) shredded mozzarella cheese
- 3 cups (or a 26-ounce jar) spaghetti sauce
- 1/2 cup Parmesan cheese
