- Grated nutmeg (about 1/2 teaspoon)
- Zest of 1 lemon
- Salt and pepper
- 1 cup Parmigiano Reggiano cheese, divided
- 1 box frozen spinach (10 ounces), defrosted
- 1 box frozen artichoke hearts (14 ounces), defrosted and chopped
- 1/2 cup breadcrumbs
- 4 12-inch x 17-inch sheets phyllo dough, defrosted
PORTUGUESE EASTER BREAD (Folar de Pascoa)

THIS RECIPE MAKES 6 LOAFS
- 3 cups sugar
- 1 cup milk, scalded
- 1/2 lb. butter, melted or 1/2 butter/lard
- 3 lb. all-purpose flour
- 1 tsp. salt
- 3 pkg. active dry yeast
- 1 tbsp. sugar
- 1 cup lukewarm water (105-115°F)
- 12 eggs
- Bake in a preheated 375°F oven for about 40 minutes or until lightly browned.

Directions Remove all seeds from peppers and chop coarsely

CANNING SALSA

PREPARE boiling water canner
- 10 cups chopped cored peeled tomatoes (about 25 medium)
- 5 cups chopped seeded green bell peppers (about 4 large)
- 5 cups chopped onions (about 6 to 8 medium)
- 2-1/2 cups chopped seeded chili peppers, jalapeno (about 13 medium)
- 1-1/4 cups cider vinegar
- 3 cloves garlic, finely chopped
- 2 Tbsp finely chopped cilantro
- 1 Tbsp salt
