Lentil Stew (slow cooker)

In 4 qt. slow cooker, combine onion, garlic, carrots, thyme, broth, water, lentils, salt and pepper
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 1/2 tea. dried thyme
- 4 cups vegetable broth
- 2 cups water
- 1 1/2 cups brown lentils
- 1/2 tea. salt
- 1/4 tea. pepper
- 1 (14 oz) can diced tomatoes, undrained
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup grated parmesan cheese
Poblano Sliders

GUACAMOLE Mash avocado and mix in all the rest of the ingredients
- 3/4 lb. hamburger, lean
- 3/4 lb. grounmd pork
- 1/2 tea. cumin
- 1/2 tea. coriander
- 1/2 tea. smoked paprika
- pinch cinnamon
- 1 Tbsp. worchestershire
- 1/3 cup beer
- salt and pepper
- 2 poblano peppers, roasted, peeled and pureed

- SOUR CREAM GUACAMOLE
- 1 avocado
- 1/2 cup sour cream
- 1 jalapeno, finely choipped
- salt and pepper

- juice form 1 lime

- PICKLED ONIONS
- separate one red onion into rings
- juice of 1 lime
- salt and pepper
- 1-2 Tbsp. olive oil
Apple Butter (crock pot)

- 5 1/2 lb. peeled and chopped apples
- 4 cups sugar
- 2 tea. cinnamon
- 1/4 tea. cloves
- 1/4 tea. salt
Carrot and Pineapple Surprise Muffins

Heat oven to 400 degrees. Line 12 regular muffin cups with paper cups
- 2 cups flour
- 3/4 cup packed brown sugar
- 1 tea. pumpkin pie spice
- 1/2 cup butter, melted
- 1 tea. baking powder
- 1 tea. baking soda
- 1/2 tea. salt
- 2 eggs, beaten
- 1 cup shredded carrots (about 1 1/2 medium)
- 1 can (8 oz) crushed pineapple in juice, undrained
- 1 pkg. (3 oz) cream cheese, softened
- 1/4 cup sugar
- 1/2 tea. vanilla
Queso Fundido del Grito

Preheat oven to 350 degrees
- 1/2 package Cacique chorizo (pork or beef)
- 1/2 cup fresh poblano pepper, seeded and sliced into 1/2" strips
- 1/2 cup white onion, sliced into 1/2" strips
- 1/2 cup tequila
- 1 package Cacique Queso Quesadilla, shredded
- 1/4 cup finely chopped tomato
- 1 Tbsp. chopped fresh cilantro
- If you double the recipe - do not double the tequila
Chicken Peanut Soup (made with canned pumpkin)

Sprinkler chicken with 1/2 tea
- 1 lb. boneless, skinless chicken breasts, cut into 1" pieces
- 1/2 tea. salt
- 1 can (1/45 oz) pumpkin puree
- 1 can (14.5 oz) stewed tomatoes
- 1/2 cup peanut butter
- 1/2 cup water
- 1/2 tea. ground coriander
Cochinita Pibil (with achiote paste)

cut meat into cubes and toss with the orange and lime juice and the achiote
- 3-5 lb. pork shoulder
- 1 cup orange juice
- 1/4 cup lime juice
- 4 Tbsp. Achiote paste
- 2 diced green onions
- 3 cloves garlic, ,minced
- salt
- 1 poblano, blister-roasted over flame and peeled
- PICKLED ONIONS
- 2 cups red onions, thinly sliced
- 2 tea. salt
- 2/3 cup orange juice
- 1 1/2 limes, juiced
- 2 Tbsp. hot sauce
Thai Sauce for shrimp or fish or chicken skewers

Combine all ingredients in a small bowl
- 1/4 cup fish sauce (nuoc mam)
- 1/4 cup unseasoned, unsweetened rice vinegar
- 2 Tbsp. fresh lime juice
- 1 Tbsp. sugar
- 1 red chile, seeded and minced
- 2 cloves garlic, chopped
Party Pitas

Brush insides of pita pockets with vinaigrette; fill with turkey, peppers and spinach
- 4 whole wheat pita pocket halves
- 1/3 cup Greek vinaigrette
- 1/2 lb. thinly sliced deli turkey
- 1 jar (7 1/2 oz.) roasted sweet red peppers, drained and patted dry
- 2 cups fresh baby spinach
- 24 pitted Greek olives
- 24 frilled toothpicks
Blueberry (Cranberry) Danish using refrig. crescent rolls

In a mixer, beast cream cheese and sugar until smooth
- 4 oz. cream cheese
- 2 Tbsp. sugar
- 1 egg
- 1/2 tea. grated lemon peel
- 1 tea. lemon juice
- 1/2 ta. vanilla
- 1/2 cup dried blueberries or cranberries
- 1 Pillsbury Crescent refrigerated seamless dogh sheet pkg.
- 1 tea honey
- 1/2 tea. water
- Confectioners' sugar, optional
