Lasagna Roll-Ups

Cook the noodles in a large pot of salted water until al dente
- 20 lasagna noodles
- salt
- 2 Tbsp. olive oil
- 1 cup finely chopped mushrooms (about 3 oz)
- 1 green pepper, diced (about 1 cup)
- 3 cloves garlic, minced
- 2 lb. ground beef
- pepper
- 1 - 28 oz. can diced tomatoes
- 1 - 6 oz. can tomato paste
- 4 Tbsp. minced fresh parsley
- 4 Tbsp. minced fresh basil
- 1 - 30 oz. container ricotta
- 1 lb. mozzarella, grated
- 1 cup grated parmesan cheese
- 2 large eggs
Caramel Apple Cake

Heat oven to 350 degrees. Coat an 8x8" baking dish with non-stick cooking spray
- 3 Granny Smith apples (8 oz each), peeled, cored and cut into 1/4" thick slices
- 3 Tbsp. lemon juice
- 1/4 cup raisins
- 1/2 tea. cinnamon
- 1/8 tea. nutmeg
- 1 cup flour
- 1 tea. baking powder
- 1/4 tea. baking soda
- 1/4 tea. salt
- 1 egg
- 2/3 cup brown sugar
- 1/2 cup milk
- 1/4 cup (1/2 stick) butter, melted, plus 2 Tbsp. cold butter
- 1 tea. vanilla
- 2/3 cup caramel sauce
- Whipped cream, optional
Swiss Cheese Potato Pie

Preheat oven to 350 degrees
- 6 eggs
- 1 cup chopped green onions
- 1/2 tea. salt
- 1/2 tea. pepper
- 3 cups diced, peeled and cooked potatoes, or frozen diced hash browns, thawed
- 6 oz. grated Swiss cheese
- 4 oz. bacon or ham, diced
- 1/2 cup diced green bell pepper
- 1/2 cup milk

mix all together. Store in airtight container
- 2 1/2 T paprika
- 1 Tbsp. cayenne
- 1 Tbsp. black pepper
- 2 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 2 Tbsp. salt (or 1 1/2 Tbsp. popcorn salt - it's finer)
- 1 Tbsp. oregano
- 1 Tbsp. thyme
French Toast - Egg Nog French Toast

Serves 8-10. Cut in half?
- 8 eggs
- 2 cups eggnog
- 1/4 cup sugar
- 1/2 tea. vanilla
- 20 to 26 slices English muffin bread
- maple sugar
aDressing: Cranberry Vinaigrette

to make it creamy whisk in 1/3 cup heavy cream with oil
- 2 Tbsp. cranberry juice
- 1 Tbsp. cider vinegar
- 2 tea. maple syrup
- 1/2 tea. Dijon mustard
- 1/2 cup olive oil
- 1/3 cup heavy cream - if you want it creamy
Brussels Sprouts - Maple Syrup and Bacon

Trim root end and remove any wilted leaves from brussels sprouts and slice, lengthwise, in half
- 1 large handfull Brussdels spriuts
- salt and pepper to taste
- 1 slice bacon
- 1/4 cup chicken broth
- 1 Tbsp. maple syrup
- 1/4 tea. fresh rosemary, removed from stems and chopped
- 1/4 tea. fresh thyme, removed from stems and chopped
Whole Chicken - Southwest Brined & Roasted

- 1 whole chicken
- 2 1/2 cups cold water
- 1/3 cup kosher salt
- 1 - 12 oz. bottle or can of beer
- Juice of one orange
- Juice of one lime
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 Tea. Mexican-style hot sauce, or more to taste
- 1 tea, Mexican oregano
- Vegetable oil
- Cajun seasoning
Potatoes - Potato Pepperoni Hash

Simmer potatoes in salted water until tender, 12 minutes
- 1 1/4 lb. diced Yukon Gold potatoes
- 3 Tbsp. vegetable oil
- 3 oz. diced pepperoni
- 1 minced garlic clove
- 3 chopped green onions
- salt and pepper
Breasts - Garlic Lemon Chicken

Cut 4 rectangles of heavy duty aluminum goil; each about the size of 1/2 a standard cookie sheet
- 2 Tbsp. grated lemon rind
- 4-5 cloves garlic, crushed
- 2 Tbsp. soy sauce
- 1/2 cup fresh lemon juice
- 2 tea. Hungarian paprika
- 4 boneless, skinless chicken breasts
- olive oil
- salt,pepper, garlic powder (for sprinkling)
- 4 sprigs Italian parsley
- 4 onion slices (sliced in thick rings)
