IN a large mixing bowl, combine flour, sugar, baking soda, cinnamon, and salt
- 2 cups flour
- 1 1/4 cups sugar
- 2 tea. baking soda
- 2 tea. cinnamon
- 1/2 tea. salt
- 2 cups grated carrot
- 1/2 cup raisins
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
- 3 eggs
- 1 cup vegetable oil
- 1 apple, cored and shredded
- 2 tea. vanilla
Taco Cups

Cut rounds from large tortillas, bake in muffin tin to form cups
- 4 - 10 " (burrito size) flour tortillas
- 1 lb. ground beef
- 1 carrot, shredded
- 1 package (1 oz) taco seasoning mix
- 1 cup chopped lettuce
- 1/2 cup shredded cheddar
- 2 plum tomatoes, seeded and chopped
- sour cream
- salsa
Spiced Chocolate Brownie Pudding

Preheat oven to 350 degrees
- 1 1/2 cups flour
- 1 cup sugar
- 1 Tbsp. baking powder
- 1/4 tea. salt
- 1/2 cup unsweetened cocoa
- 3/4 cup chopped walnuts
- 3/4 cup buttermilk
- 3 Tbsp. unsalted butter, melted
- 1 1/4 cups packed brown sugar
- 1 tsp. ground cinnamon
- 1 3/4 cups boiling water
- Whipped cream or ice cream
Bacon Biscuits/Muffins

Cook bacon, drain. In a large bowl combine biscuit mix and sugar
- 6 bacon strips, diced
- 2 cups biscuit/baking mix
- 2 Tbsp. sugar
- 1 egg
- 2/3 cup milk
Chicken Corn Spicy Chowder

In a 5-6 qt. Dutch oven cook bacon until crisp
- 8 slices bacon, chopped
- 1 lb. skinless, boneless chicken breast, cut into bite sized pieces
- 1 1/2 cups chopped red sweet pepper
- 1 cup chopped sweet onion
- 1-2 fresh jalapeno peppers, finely chopped
- 4 cloves garlic, minced
- 1/2 cup flour
- 6 cups chicken broth
- 2 large Yukon Gold potatoes, chopped
- 2 cups fresh sweet corn kernels
- 1 1/2 cups whipping cream
- 1/2 tea. cayenne pepper
- 2 bay leaves
Mexican Chicken Alfredo

Cook pasta according to package directions
- 1/2 pkg. (8 oz) gemelli or spiral pasta
- 1 lbs. boneless skinless chicken breasts, cubed
- 1 small onion, chopped
- 1/8 tea. salt
- 1/8 tea. pepper
- 1/2 Tbsp. oil
- 1 jars (15 oz) Alfredo sauce
- 1/2 cup grated Parmesan cheese
- 1/2 cup medium salsa
- 2 Tbsp. cup 2% milk
- 1 tea. taco seasoning
Bread Pudding - White Chocolate Pudding

In a greased 9x13 baking dish, layer half of the bread cubes, cranberries, vanilla chips and pecans
- 16 slices cinnamon bread, crusts removed, cubed
- 1 cup dried cranberries
- 3/4 cup vanilla chips
- 3/4 cup chopped pecans
- 1/4 cup butter, melted
- 6 eggs
- 4 cups milk
- 3/4 cup plus 1 Tbsp. sugar, divided
- 1 tea. vanilla
- 1/4 te3a. cinnamon
- 1/4 tea. allspice
- SAUCE
- 2/3 cup heavy whipping cream
- 2 Tbsp. butter
- 8 squares (1 oz each) white baking chocolate, chopped
Chicken - Grilled Margarita Chicken Salad

Season chicken, grill 15-20 minutes brushing occasionally with 1/4 cup dressing
- Dressing:
- 4 boneless, skinless chicken breasts
- 6 cups salad greens
- 1 cup sliced strawberries or kiwi
- 1 mango peeled, pitted and sliced
- 1 avacado peeled, pitted and sliced
- 1/4 cup chopped fresh cilantro
- 1/2 cup margarita mix
- 1/4 cup olive oil
- 2 tablespoons tequila or white wine vinegar
Tilapia with Olives, Capers and Chilies

Preheat oven to 450 degrees
- 2 cups tomato sauce
- 1/2 cup green Sicilian olives
- 2 Tbsp. capers
- 1 tea. dried red chili flakes
- 1 cup white wine
- 1/4 cup white wine vinegar
- 1 tea. sugar
- 2 fresh tilapia fillets
- salt and pepper
- extra-virgin olive oil
- Crusty bread, for serving
Rosemary Beef Tenderloin (or Pork Top Loin roast)

Preheat oven to 425 degrees
- 2 Tbsp. Dijon mustard
- 1 Tbsp. olive oil
- 1 Tbsp. snipped fresh rosemary
- 3 cloves garlic, minced
- 3/4 tea. salt
- 1/4 tea. pepper
- 1 (2 1/2-3 lb) center cut beef tenderloin* (or 2 1/2 lb. boneless pork top loin roast - single loin)
- 1 4-6 oz. log garlic and herb goat cheese (chevre), cut crosswise into 8 slices (or half an 8-oz. tub cream cheese spread with chive and onion)
- order a center-cup tenderloin from the butcher or meat counter ahead of time. The center cut holds its shape best during roasting.
