Mock Almond Roca

Lightly grease cookie sheet with butter
- 1 cup butter
- 1 cup brown sugar
- 1 pkg. graham crackers
- 12 oz. chocolate chips
- 1-2 cups chopped almonds
Apple Cake (Salted Carmel Apple Cake)

Heat oven to 350 degrees. Butter the bottom of a 10" round cake pan with 4 tbsp
- 6 Tbsp. cold butter
- 1 1/2 cups packed brown sugar
- 1 tea. sea salt
- 4 Gala apples Z(about 2#), cored, peeled and cut into 8 wedges
- 1 1/2 cups flour
- 1 Tbsp. pumpkin pie spice
- 2 tea. baking powder
- 1/4 tea. salt
- 1/2 cup (1 stick) butter, softened
- 2 eggs
- 1 tea. vanilla
- 1/2 cup half-and-half
- Whipped cream (optional)
Tuna Salad - Mediterranean Style

In a large bowl, combine all ingredients and mix well
- 1 can albacore tuna
- 1/4 cup feta cheese
- 1/4 cup chopped black olives or kalamata
- 1/8 cup finely chopped fresh parsley
- 1/8 cup finely chopped red onion
- Olive oil, just enough to mix together
- red wine vinegar to taste
- 1/2 Tbsp. Greek Seasoning
Eggs in Potato Hollows

Combine mashed potatoes, bacon, onion, herbs and pepper, stirring until well mixed
- 4 cups cold mashed potatoes
- 1/2 cup crumbled crisp bacon or diced ham
- 1/4 cup minced onion
- 1/4 cup chopped fresh herbs (tarragon, dill, parsley, etc)
- 1/2 tea. pepper
- bacon fat or butter
- 1/2 cup dry bread crumbs
- 8 eggs
- 1 cup shredded cheese (cheddar, jack, pepper jack)
Bread and Butter Style Zucchini Pickles

Makes 3 pints
- 2 lb. zucchini, thinly slices
- 1/2 lb. onions, quartered and thinly sliced
- 1/4 cup canning and pickling salt
- 2 cups sugar
- 2 cups apple cider vinegar
- 1 tea. celery seeds
- 1 tea. turmeric
- 1 tea. prepared yellow mustard
- 2 tea. mustard seeds
- 3 (1 pint) canning jars
Ham Horseradish Cubes

In a small bowl, beat the cream cheese, horseradish, worcestershire sauce, seasoned salt and pepper
- 1 pkg. (8 oz) cream cheese, softened
- 2 Tbsp. prepared horseradish
- 1 tea. worcestershire sauce
- 1/2 tea. seasoned salt
- 1/8 tea. pepper
- 10 square slices deli ham
Ham and Hashbrown Soup

In a Dutch oven or soup kettle, combine the first seven ingredients; bring to a boil
- 1 lb. frozen shredded has brown potatoes
- 2 cups water
- 1/2 large onion, chopped
- 1/3 cup sliced celery
- 2 chicken bouillon cubes
- 1/4 tea. celery seed
- 1/8 tea. pepper
- 2 cans condensed cream of chicken soup, undiluted
- 1 pint milk
- 1 cup cubed fully cooked ham
- 1/2 Tbsp. dried parsley flakes
- 3/4 tea. garlic salt
- 4 bacon strips, cooked and crumbled

- 2 lbs medium red or white potatoes, quartered......
- 1/4 teaspoon ground pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon honey
- 1 tablespoon chili powder
- 2 tablespoons butter or margarine, melted
Sausage Breakfast Casserole

Spray a 6-quart slow cooker with cooking spray
- 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
- 1 pkg. Jimmy Dean® Original Sausage Crumbles
- 2 cup (8 ounces) shredded mozzarella cheese
- 1/2 cup (2 ounces) shredded Parmesan cheese
- 1/2 cup julienne-cut sun-dried tomatoes packed in oil, drained
- 6 green onions, sliced
- 12 eggs
- 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
