Tomatoes - Bloody Mary Roasted Tomatoes

Great on a roast beef sandwich prepared with horseradish sauce
- 1 pint grape tomatoes
- 1 Tbsp. olive oil
- 1 tea. worcestershire sauce
- 1/4 tea. celery salt
- hot sauce, such as Tabasco, for seasoning
Greek Chopped Salad

In a small bowl, whisk together lemon juice, red onion, oregano, garlic, salt, pepper and sugar
- 3 Tbsp. lemon juice
- 2 Tbsp. red onion, minced
- 3 tea oregano, chopped
- 1 garlic clove, minced
- 1/8 tea. salt
- 1/8 tea. pepper
- 1/8 tea. sugar
- 4 Tbsp. olive oil

- 2 hearts of romaine, chopped (8 cups)
- 1 medium-sized cucumber, peeled, seeded and cut into 1/2" pieces
- 2 cups cherry tomatoes, quartered
- 1 14-oz can chickpeas, drained and rinsed
- 1/2 cup chopped parsley
- 1/3 cup[ chopped pitted kalamata olives
- 5 oz. feta cheese, crumbled
aDressing: Blue Cheese

In medium bowl, combine and ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup buttermilk
- 1 cup crumbled blue cheese
- 1 Tbsp. lemon juice
- 1/2 ta. pepper
- /4 tea. garlic powder
aDressing: Tahini Dressing

- 3 Tbsp. tahini
- 3 Tbsp. lemon juice
- 2 Tbsp. warm water
- 1 small garlic clove, minced
- 1/2 tea. ground cumin
- 1/2 tea. salt
- 1/8 tea. red pepper flakes
Potatoes - Rock Salt-Roasted

Preheat oven to 350 degrees
- 1 (4 lb) box coarse food grade rock salt
- 3 lb. small potatoes (about 24)
- 3 Tbsp. olive oil
- 1 Tbsp. chopped fresh thyme
- 1 tea. freshly ground black pepper
3 Berry Oatmeal and Almond Crisp (individual servings)

Preheat oven to 350 degrees Combine the strawberries, blueberries, and raspberries in 8 individual ramekins
- 1 1/2 cups strawberries, hulled and cut into 1/2" pieces
- 1 cup blueberries, rinsed and drained
- 1 cup raspberries, rinsed and drained
- 1 Tbsp. flour
- 3 Tbsp. packed brown sugar, divided
- 1 tea. grated lemon zest
- 1/2 cup quick-cooking (not instant) oatmeal
- 2 Tbsp. whole-wheat pastry flour
- 2 Tbsp. light olive oil or vegetable oil
- 2 Tbsp. sliced almonds (skin on)
- 1/2 cup low-fat vanilla yogurt
Pumpkin - Lemon - Cranberry Coffee Cake

Preheat oven to 350 degrees
- 2 cups flour
- 1 tea. baking powder
- 1 tea. baking soda
- 1/2 tea. salt
- 1 cup sugar
- 1/2 cup (1 stick) butter, softened
- 2 eggs
- 1 tea. vanilla
- 1 Tbsp. lemon juice
- 3/4 cup plain nonfat yogurt
- 3/4 cup canned unsweetened pumpkin
- 1 tea. lemon zest
- 3/4 cup dried cranberries
- 1/2 cup brown sugar
- 1/2 cup pecans, coarsely chopped
- 2 tea. cinnamon
- 1 tea. allspice
Corn Chili

In a medium saucepan, combine the corn with 1/2 cup water
- 4 cups fresh or frozen corn kernels
- 4 Tbsp. butter
- 1 med. red bell pepper, cut into 1/4" dice
- 2 scallions, white and green portions thinly sliced and separated
- 1/2 tea. mild chili powder
- 1/2 tea. salt
- 1/2 tea. pepper
- 1 small jalapeno pepper, seeded, deribbed and minced (about 1 Tbsp.)
- 1/2 cup loosely packed cilantro leaves, finely chopped
- hot pepper sauce, to taste
Chicken Pomodoro (with vodka cream sauce)

Season cutlets with salt and pepper, then dredge in flour
- 2 boneless, skiness chicken breasts, cut in half and pounded into cutlets
- Salt and pepper

- nonstick spray
- 2 Tbsp. vegetable oil
- 1/4 cup vodka
- 1/2 cup chicken broth
- 2 Tbsp. fresh lemon juice
- 1/2 cup chopped fresh tomato
- 2 Tbsp. heavy cream
- 1/3 cup sliced green onions
One Pot Roasted Chicken with tomatoes and olives

Heat oven to 425 degrees. with vegetable peeler remove stips of zest from lemon (reserve lemon)
- 1 lemon
- 2 pints grape tomatoes
- 1 head garlic, cloves separated
- 1 cup pitted kalamata olives, cut in half
- 8 sprigs fresh thyme
- 2 Tbsp. olive oil
- 1 3 lb. chicken, cut into pieces
- salt and pepper
- 1/2 cup dry white wine

- Thick slices of country bread (optional) for dipping into juices
