Cranberry Orange Pork Roast

HEAT oil in large skillet on medium-high heat
- 2 Tbsp. oil
- 1 flat boneless pork loin roast (4 lb.)
- 1 can (14 oz.) whole berry cranberry sauce
- 1/2 cup KRAFT Classic CATALINA Dressing
- 1 Tbsp. less-sodium soy sauce
- 1 Tbsp. cornstarch
- 1 tsp. zest and 1/4 cup juice from 1 orange
Zucchini Cranberry Bread

In a small bowl, cream butter and sugar
- 2 Tbsp. butter, softened
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1 1/2 tea. baking powder
- 1/4 tea. salt
- 3/4 cup shredded zucchini
- 2/3 cup whole-berry cranberry sauce
- 1/2 cup chopped pecans
- 1 1/2 tea. grated orange peel
Salmon - Orange Glazed

Combine Cajun seasoning, sugar, and alt in a small bowl
- 3 Tbsp. Cajun seasoning
- 1 tea. brown sugar
- 1/4 tea. salt
- 4 boneless, skinless salmon fillets (6 oz each)
- 2 Tbsp. vegetable oil
- 1/4 cup orange marmalade
- 1 Tbsp. lime juice

Bread - Mexican Monkey Bread (Kristin's recipe)

Heat oven to 350 degrees. Spray a 5x9 loaf pan with cooking spray
- 1 can (16.3 oz) refrigerated biscuits, quartered
- 2 Tbsp. butter, melted
- 1 1/4 cups Shredded Cheddar Cheese
- 3/4 cup drained canned sliced jalapeno peppers
- 3/4 tea. parsley flakes
- 1/4 cup Shredded Mozzarella Cheese
Mini Mushroom & Sausage Quiches

These crustless mini quiches are like portable omelets
- 8 oz. turkey breakfaszt sausage (removed from casing and crumbled into small pieces)
- 1 tea. extra-virgin olive oil
- 8 oiz. mushrooms, sliced
- 1/4 cup sliced green onions
- 1/4 cup shredded swiss cheese
- 1 tea. pepper
- 5 eggs
- 3 egg whites
- 1 cup 1% milk
aDressing: Sesame Peanut Dressing

Whisk all ingredients together Serve over grilled chiken and salad greens
- 2 Tbsp. creamy peanut butter
- 1/2 cup toasted sesame oil
- 1/2 cup apple cider or apple juice
- 1 Tbsp. soy sauce
- 1 Tbsp. grated gingerroot
- 2 cloves garlic, finely chopped
- 1/2 ta. grated lemon peel
- 1/4 tea. ground red pepper (cayenne)
- 2 Tbsp. honey
Pork Cutlets with capers and parsley rice

In a large saucepan, bring the water, onion, butter and bouillon to a boil
- RICE:
- 4 cups water
- 1/2 cup dried minced onion
- 2 Tbsp. butter
- 4 Tea. chicken bouillion granules
- 4 cups uncooked instant rice
- 1/2 cup fresh parsely
- 'PORK:
- 2 pork tenderloins (1 1/4# each)
- 1/2 cup flour
- 1 tea. each salt and pepper
- 2 Tbsp. olive oil
- 1 cup chicken broth
- cup white wine or chicken broth
- 1/4 cup capers, drained
- 2 Tbsp. minced fresh parsley
Dip - Hot Hamburger Bacon Cheese

Cook the ground beef in a pan over medium heat, set it aside and drain the grease from the pan
- 1/2 pound ground beef
- 6 strips bacon, cut into 1 inch pieces
- 1 small onion, diced
- 1 clove garlic, chopped
- 4 ounces cream cheese, room temperature
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 cup mozzarella, shredded
- 1/2 cup cheddar cheese, shredded
- 1 tablespoon worcestershire sauce
- 2 tablespoon ketchup
Ham and Four Bean Salad

Combine first 6 ingredients in a large bowl
- 1 1/2 cups finely chopped ham
- 1 1/2 cups chopped green onions
- 1 (16 oz) can lima beans, rinsed and drained
- 1 (15 1/2 oz) can garbanzo beans, rinsed and drained
- 1 (156 oz) can red kidney beans, rinsed and drained
- 1 (15 oz) can black beans, rinsed and drained
- 1/2 cup cider vinegar
- 1 tea. sugar
- 1 tea. olive oil
- 1/2 tea. cumin
- 1/8 tea. salt
- 1/8 tea. black pepper
Pineapple - Grilled Tequila-Cilantro Pineapple

Cut the pineapple lengthwise into 8 wedges
- 1 fresh pineapple, peeled and cored
- 1 cup chopped fresh cilantro
- 1 cup tequila
- 1 1/2 tablespoons ground chipotle chiles
- 1 lemon
- 1 lime
- salt and pepper to taste
