- 1 1/2 cups milk
- 1 1/4 cups shredded Cheddar cheese, about 5 oz.
- 2 green onions, chopped
- 2 tea. dry Southwest seasoning

- 1 (4 lb) fully cooked boneless ham
- 1 cup orange marmalade
- 1 cup orange juice
- 1/4 cup firmly packed brown sugar
- 2 Tbsp. creamy Dijon mustard
- 1 tea. ground ginger
Butter - Cinnamon Honey Butter

- 3 ears sweet corn
- 1 lb. tomatoes, cored and diced
- 1/4 cup diced red onion, rinsed in cold water and patted dry
- 1 Tbsp. rice wine vinegar
- 1/4 cup chopped fresh basil
- salt and pepper

- 10 jalapenos, seeded, deveined and halved lengthwise

- 30 individual frozen mini phyllo shells, thawed
- 3/4 cup mayonnaise
- 6 Tbsp. sour cream
- 1/4 cup buttermilk
- 1/2 (1 1/4 oz) packet taco seasoning mix (3 Tbsp)
- 1 Tbsp. fresh lime juice
- Toppings: grated carrot, shredded lettuce, minced cilantro, minced green bell pepper

- 1 15-oz. can pumpkin puree
- 1 13.5-oz. can light coconut milk, shaken
- 4 cups chicken broth

- 2 cups flour
- 2 tea. baking soda
- 2 tea. cinnamon
- 1/4 tea. salt
- 2 cups shredded carrots
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 1 (8 oz) can crushed pineapple with juice
- 1 cup raisins or dried cranberries
- 3 eggs
- 3/4 cup buttermilk
- 3/4 cup vegetable oil
- 1 1/2 cups sugar
- 2 tea. vanilla
- Option: add grated lemon peel and make frosting with lemon juice and zest
