In large pot, heat oil over medium heat
- 1 Tbsp. oil
- 1 onion, chopped (1 1/2 cups)
- 3 cans (14 1/2 oz. each) chicken broth
- 1 can (4 1/2 oz) diced tomatoes with basil, garlic and oregano
- 1 can (15 oz) red kidney beans, rinsed and drained
- 1/2 cup ditalini pasta
- 1/4 tea. pepper
- 2 cups cooked turkey or chicken
- 2 cups cooked vegetables
- 2 Tbsp. chopped fresh parsley
- Shredded Parmesan cheese, optional

Preheat oven to 425 degrees
- 1/3 cup flour
- 3 Tnsp. fine-ground cornmeal
- 1/4 cup finely grated Parmesan
- 1/2 tea. garlic powder
- 1/2 tea. onion powder
- 1/2 pepper
- 1/4 salt
- 1/2 cup butt3rmilk
- 1 egg, lightly beaten
- 8 chicken breast tenders (bout 1 1/4 lb)

- 3 dashes liquid smoke (optional)

- 3 Tbsp. cornstarch
- 1 tbsp. white vinegar
Sausage & Bean Minestrone

Cook sausage in oil over medium heat, stirring occasionally, until browned (8-10 minutes)
- 1 lb. Italian sausage, cut into 1" pieces
- 3 carrots, cut into 1/4" pieces (3/4 cup)
- 2 cloves garlic, minced
- 1 can (14 1/2 oz) chicken broth
- 1 can condensed tomato soup
- 1 cup uncooked small pasta
- 1 can (15/5 oz) cannelini beans, rinsed and drained
- 2 Tbsp. chopped fresh parsley

Salmon -Maple Chipotle Salmon

- 1 salmon fillet (about 3#)
- 1/2 cup maple syrup
- 1 Tbsp, coarse-ground Dijon mustard
- 1/2 tea. ground chipotle chile powder
- 1/4 tea. pepper
- 1/2 cup sour cream
- 2 Tbsp. mayonnaise
- 1 Tbsp. chopped fresh dill
- 1 orange, zested and juiced
