Blend all ingredients together in mixing bowl
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 1 (8 oz) carton sour cream
- 1 pkg. jalapeno cornbread mix
Chickpea Salad w/ lemon, parmesan & fresh herbs

The beauty of this basic recipe is that it can be tweaked in numerous ways
- 1 15-oz. can chickpeas (garbanzo) rinsed, drained
- 2 Tbsp. chopped fresh basil
- 2 Tbsp. chopped fresh parsely
- 2 Tbsp. fresh lemon juice
- 4 tea. extra-virgin olive oil
- 1 small clove garlic, pressed
- 1/3 cup (packed) freshly grated parmesan cheese

Apple Pie - Mexican Style

Combine the apples, flour, sugar, cinnamon, ginger, nutmeg, lemon juice, and green chiles in a large bowl and toss
- Crust
- Use a refrigerated crust
- Filling
- 6-7 apples, peeled and sliced (about 6 cups)
- 1/2 cup flour
- 1/2 cup sugar, plus more for sprinkling
- 2 Tbsp. cinnamon
- 1/2 tea. ginger
- 1/2 tea. nutmeg
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup canned or fresh chopped hot green chilies
- 1 egg
Mincemeat Bars - Rachael Ray 8" sq. pan

Mix dry ingredients. Press 3/4 oat mixture into greased 8" square baking dish
- 1 1/2 cups mincemeat
- 3/4 cup brown sugar
- 3/4 tea. salt
- 1 stick butter, cubed
- 1 1/4 cups rolled oats
- 1 cup flour
- 1 1/2 tea. cinnamon
- 1/2 tea. baking powder
Breakfast Casserole

This can be assembled and refrigerated for up to 12 hours before baking
- 1 lb. sausage
- 10 eggs, lightly beaten
- 3 cups milk
- 2 tea. dry mustard
- 1 tea. salt
- 6 cups cubed bread
- 1/2 tea. pepper
- 2 cups sharp cheddar cheese, shredded
- 1/2 cup sliced mushrooms (optional)
- 1 medium tomato, seeded and chopped (optional)
- 1/2 cup thinly sliced green onions (optional)
Corn - Sweet Corn Pudding

Preheat oven to 325 degrees
- 2 tea. butter, softened
- 2 Tbsp. fine dry bread crumbs
- 12 ears sweet corn (cut from cob to equal 6 cups)
- 1 cup milk
- 3/4 cup masa harina
- 1/4 cup sugar
- 1/4 cup butter, softened
- 3/4 tea. baking powder
- 1/2 tea. salt
- 1/2 tea. cumin
- 1/2 cup chopped green onions (4)
- 1 4-oz. can diced green chile peppers, drained
- 1/3 cup cornmeal
- 1 Tbsp. snopped fresh cilantro
Beef Tenderloin w/ Dr. Pepper

Combine all marinade ingredients in a large ziplock
- 2 lb. beef tenderloin
- 1 liter Dr. Pepper (not diet)
- 1/2 cup soy sauce
- 3/4 cup lemon juice (about 3 lemons)
- 1 Tbsp. black peppercorns
- 1 Tbsp. salt
- 3 cloves garlic
Beer Bread - 3 ingredients

Heat oven to 350 degrees. Sift together flour and sugar, then pour in room temperature beer and stir 25 strokes

- 2 cups self-rising flour**
- 12 oz. bottled beer
- 2 Tbsp. sugar
- 1 cup flour
- 1 1/2 tea. baking powder
- 1/2 tea. salt
- Yogurt can be added for a traditional sourdough flavor.
- Optional: Chopped green onions or jalapenos
Super Italian Chopped Salad

In large bowl, combine the first 11 ingredients (thru green onions)
- 3 cups torn romaine
- 1 can (15 oz) garbanzo beans, rinsed and drained
- 1 jar (6 1/2 oz) marinated artichoke hearts, drained and chopped
- 1 medium green bell pepper, chopped
- 2 medium tomatoes, chopped
- 1 can (2 1/4 oz) sliced ripe olives, drained
- 5 slices deli ham, chopped
- 5 thin slices hard salami, chopped
- 5 slices pepperoni, chopped
- 3 slices provolone cheese, chopped
- 2 green onions, chopped
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 1/4 tea. salt
- 1/8 tea. pepper
- 2 Tbsp. grated Parmesan cheese
- Pepperoncinis, optional
Watermelon and Basil Salad
