  • 3/8 tsp salt, divided
  • 1/8 tsp freshly ground black pepper
  • 8 (1 oz) slices country-style Italian bread
  • 1/2 cup (2 oz) shredded fresh mozzarella cheese

  • Plum Coffee Cake:
  • 1 1/4 cups (175 grams) all purpose flour

  • 2 tablespoons (30 grams) coarse brown sugar (I like to use Turbinado or Demerara sugar)
