Cook's Note: Use canned crushed tomatoes if you cannot find passata di pomodoro
- 6 beef cutlets (beef top round sliced thin into cutlets)
- 1/2 cup grated pecorino, plus more for serving
- 4 tablespoons chopped fresh parsley
- 6 cloves garlic, finely chopped
- Kosher salt and freshly ground black pepper
- Olive oil
- 5 ounces beef stew meat, cubed, such as chuck
- 1 carrot, finely chopped
- 1 red onion, finely chopped
- 1 cup red wine
- One and a half 24-ounce jars passata di pomodoro (tomato puree)
- 5 bay leaves
- 1 pound orecchiette pasta

- 1 cup chopped yellow onions
- 2 cloves garlic, minced
- 1/8 cup good olive oil
- 1/2 teaspoon dried oregano
- 1-1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 cups medium-diced carrots (3 to 4 carrots)
- 1 cup medium-diced red boiling potatoes, unpeeled (3 small)
- 1 pound dried split green peas
- 8 cups chicken stock or water

Preheat the oven to 450 degrees
- For the cakes:
- olive oil spray
- 1-1/4 cups whole wheat panko (Japanese breadcrumbs)
- 2 egg whites
- 1 tablespoon fat free milk
- 1/2 cup minced sweet onion
- 2 tablespoons finely chopped parsley leaves
- 2 tablespoons seeded, minced red jalapeno pepper
- 1/3 cup low-fat mayonnaise
- 1 teaspoon Worchestershire sauce
- 1 teaspoon prepared horseradish
- 1 pound lump crabmeat
- 1-3/4 inch cookie scoop (optional)
- For the lemon caper dipping sauce:
- 1/2 cup low-fat mayonnaise
- 4 teaspoons fresh squeezed lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons finely chopped parsley leaves
- 2 teaspoons finely chopped green onion
- 2 teaspoons chopped, drained capers
- 2 teaspoons minced or crushed garlic
- 1/2 teaspoons sugar
Pumpkin Spice Cake With Honey Frosting

Be sure to use canned pumpkin puree -- not pumpkin pie filling or fresh pumpkin puree
- FOR THE CAKE
- 1/2 cup (1 stick) unsalted butter, melted, plus more for pan
- 2 1/2 cups all-purpose flour (spooned and leveled)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 tablespoon pumpkin-pie spice (or 1 1/2 teaspoons cinnamon, 3/4 teaspoon ginger, 1/2 teaspoon nutmeg, and 1/8 teaspoon each allspice and cloves)
- 2 large eggs
- 1 1/2 cups sugar
- 1 can (15 ounces) solid-pack pumpkin puree
- FOR THE HONEY FROSTING
- 1/2 cup (1 stick) unsalted butter, very soft
- 1 bar (8 ounces) regular (or reduced-fat) cream cheese, very soft
