- 4 cups all-purpose flour (spooned and leveled), plus more for working
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons coarse salt
- 2 cups grated sharp white cheddar (5 1/2 ounces)
- 2 tablespoons chopped fresh sage
- 3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
- 1 1/2 cups low-fat buttermilk
Coconut Carrot Cake

Preheat the oven to 350 degrees F
- Butter or cooking spray, for greasing the pans
- 1 3/4 cups sugar
- 4 eggs
- 1 cup grapeseed oil
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground fennel
- 1/2 teaspoon ground nutmeg

Prepare the sauce. Place a small amount of oil, onion and garlic in a soup pot over medium heat
- MEATLESS MEATBALLS:
- 1 cup crumbled soy ground meat (like Gimme Lean)
- 1/3 cup finely minced red onion
- 1/2-2/3 cup fresh breadcrumbs
- 1 teaspoon finely minced fresh basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1/4 cup tomato paste
- 1 pound whole wheat spaghetti
- TOMATO SAUCE:
- Extra virgin olive oil
- 1 small yellow onion, finely diced
- 3-4 cloves fresh garlic, finely minced
