Chicken-and-Wild Rice Casserole

- 2 (6.2-oz.) boxes fast-cooking long-grain and wild rice mix
- 1/4 cup butter
- 4 celery ribs, chopped
- 2 medium onions, chopped
- 5 cups chopped cooked chicken
- 2 (10 3/4-oz.) cans cream of mushroom soup
- 2 (8-oz.) cans chopped water chestnuts, drained
- 1 (8-oz.) container sour cream
- 1 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups (16 oz.) shredded Cheddar cheese, divided
- 2 cups soft, fresh breadcrumbs
Chicken Tetrazzini

Directions Combine soup, mushroom, pimentos and sour cream
- 4 Chicken Breasts, cooked and cubed
- 2 Cans Cream of Chicken soup
- 1 Can (8 oz) Mushroom pieces and stems
- 1 Small jar Pimentos, chopped and drained
- 16 Ounces Sour Cream
- 12 Ounces Thin spaghetti, cooked and drained
- 1 Cup Grated Parmesan cheese
- 2 Cups Cheddar cheese, shredded

- 6 oz cream cheese, softened
- 5 T butter, softened
- 1/3 cup sugar
- 2 eggs
- 2 T flour
- 3/4 tsp vanilla
- 1 family size pkg (23.6) brownie mix (use cake like)
- 1 carton Duncan Hines Milk Chocolate Frosting
Creamy Chicken Enchiladas

Directions Saute onion in butter for 5 minutes
- 1 Tablespoon Butter, melted
- 1 Medium onion, chopped
- 1 Can (4.5 oz) chopped green chilies, drained
- 1 Package (8 oz) cream cheese, softened and chopped
- 3 1/2 Cups Cooked Chicken breast, cut up
- 8 (8") flour tortillas
- 16 Ounces Monterey Jack cheese, shredded
- 2 Cups Heavy whipping cream
