Asparagus Tea Sandwiches

In a shallow bowl, mash the asparagus until as much liquid has been absorbed as possible
- 1 (15 oz.) can asparagus,drained
- 1/4 tsp. salt
- 1/2 c. chopped pecans
- 8 oz. cream cheese, room temp.
- 1 (1 lb.) loaf thin-sliced bread
- 1/2 c. mayonnaise
Mandarin Salad

Mix dressing ingredients well
- 1 1/2 cups romaine or spinach leaves, torn
- several thin slices red onion
- 1/2 cup mandarin oranges, drained (no sugar added)
- 1 teaspoon coconut
- 2 tablespoons low calorie poppyseed dressing
- Dressing (makes 2 cups)
- 1/2 cup reduced calorie spicy-sweet French dressing (16 calories per tablespoon)
- 1 8-ounce can tomato sauce
- 3 tablespoons cider vinegar
- 2 tablespoons yellow prepared mustard
- 1 tablespoons onion powder
- 8 packages Equal
- 2 tablespoons poppy seeds
- 2 tablespoons water
Key Lime Pie

Blend together eagle brand, Cool Whip, and lime juice
- 1-9 " ready to use pie shell
- 1 can eagle brand
- 1 8 or 9 oz Cool Whip
- juice of 4 sm. limes (approx 1/2 c.)
Crowd-Pleaser Potatoes

Cook, by boiling, potatoes in jackets until barely tender , cool and grate
- 8 mad. potatoes
- 1 bay leaf
- 1/2 c. melted butter
- 1 can cream of chicken soup
- 2 c. sour cream
- 1/2 tap. salt
- 1/4 tsp. popper
- 3 green onions, chopped
- 2 c. grated Cheddar cheese
Chicken Enchiladas

Melt butter. Add onion to melted butter, saute 5 minutes
- 1 T. butter
- 1 medium onion, chopped
- 1 (4.5oz) chopped green chilis, drained
- 1 (8oz) cream cheese, softened, cut up
- 3 1/2 c. cooked chicken breast, chopped
- 8 (8") flour tortillas
- 2 (8oz) Mont. Jack, shredded
- 2 c. whip cream

Bring all ingredients except mushrooms to a boil
- 1/3 cups red wine vinegar
- 1/3 cups water
- 1 small onion cut in rings
- 1 teaspoon garlic salt
- 1/2 teaspoon seasoned pepper
- 2 teaspoons parsley, snipped
- 1 teaspoon prepared mustard
- 1 tablespoon sugar
- 2 6-ounce cans mushroom caps
