Cheese Preserves

Pour over cream cheese. Serve with crackers that are not cheese flavored
- 1 - 18oz jar pineapple preserves
- 1 - 18oz jar apple jelly
- 1 - small box dry mustard
- 1 - small jar horseradish - use juice
- 1 - T. coarse ground pepper
Creamy Lemon Parmesan Chicken

Piccata
- 4 boneless/skinless chicken breasts
- 2 T Flour
- 2 T finely grated fresh Parmesan cheese
- 1 t salt
- cracked pepper
- light spray of cooking oil
- 1 T olive oil
- 2 T butter2T minced garlic
- 1 1/4 cup chicken broth
- 1/2 cup milk
- 1/3 c finely grated fresh Parmesan cheese
- 2 t capers
- 1 t cornstarch - mixed with 1 T water?
- 2-3 T lemon juice
- 2 T fresh parsley
Marinated Mushrooms

Bring all to a boil, then add mushrooms, Simmer for 5 minutes
- 1/3 c. red wine vinegar
- 1/3 c. water
- 1 sm. onion, cut in rings
- 1 tsp. garlic salt
- 1/2 tsp. seasoned pepper
- 2 tsp. parsley, snipped
- 1 tsp. prepared mustard
- 1 T. sugar
- 12 oz. canned mushroom caps,
- drained
Crunch pea salad

Cook peas, pasta, bacon and cauliflower
- 1 cup diced celery
- 10 oz fresh or frozen peas
- 1 cup chopped cauliflower
- 1/4 c diced green onions
- 1 cup cashews
- 1/4 cup crisp cooked bacon
- 1/2 cup sour cream
- 1 cup hue pasta
- 1/2 tsp Dijon mustard
- 1 small garlic minced
Perfection Salad

- 1 pkg sugar free lemon jello
- 1/2 small head of cabbage, sliced small
- 30 small green olives, sliced
Taco Salad

Serve with taco salad dressing
- 1 head of lettuce torn bite size
- 1 sm can kidney beans, drained
- 1 chopped onion
- 1 # hamb. browned
- 1 pkg. Taco seasoning, reserve it, add rest to hamb.
- 4 med. tomatoes, diced
- 1 lg. pkg. shredded cheddar cheese
- pkg taco chips
Hot Zucchini Soup - 1983 Command Section Lunch - Serves 6-8

Wash squash - slice thinly
- 1 *zucchini very thinly sliced (do not peel)
- 4 T. chopped onions
- 4 T. Butter
- 1 clove garlic - crushed
- 1/2 t. salt
- 1/2 t. pepper
- 1 3/4 c. chicken broth
Cajun Potatoes and Corn on the Cob

Potatoes Clean potatoes and boil with crab and shrimp and creole seasonings until tender
- Potatoes
- 16 ounces red potatoes
- 2-3 tablespoons crab and shrimp boil
- 2-3 tablespoons creole seasoning
- Corn
- 4 cobbettes of corn
- 2 tablespoons crab and shrimp boil*

Chicken Spaghetti

Boil chicken. Remove chicken and boil spaghetti in broth from chicken
- 1 pkg spaghetti
- Cream of mushroom soup
- Velveeta
- Chicken
Art's Favorite Layered Dip

Warm the cream cheese and refried beans (separately), until each is spreadable
- 1 (8 oz.) block cream cheese
- 1 (16 oz.) can refried beans
- 1 1/2 c. salsa
- 1 to 2 c. cheese, shredded
- Tortilla chips
- Green onions, for garnish (opt.)
