Salad Dressing/Balsamic Vinaigrette

Place ingredients in a small bowl
- 1/3 cup balsamic vinegar
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 tbsp Dijon mustard
- 1 tbsp minced fresh garlic
- 1 tbsp minced fresh parsley
- 1/2 tsp apple juice concentrate
Sauce/Peach Apple Salsa/ Canning

Wash and rinse canning jars, keep hot until ready to use
- 6 cups (3 pounds) chopped Roma tomatoes
- 2 1/2 cups diced yellow onions (1 pound)
- 2 cups chopped green bell peppers (1 1/2 large)
- 10 cups ($ 1/2 pounds) chopped, hard unripe peaches
- 2 cups chopped Granny Smith apples (2 large)
- 4 tbsp mixed pickling spice
- 1 tbsp canning salt
- 2 tsp crushed red pepper flakes
- 3 3/4 cups (1 1/4 pound) packed light brown sugar
- 2 1/4 cups cider vinegar (5 per cent) below

- 4 large, fresh eggs, measured
- Equal quantity of milk to eggs
- Equal quantity of all purpose flour to eggs
- Pinch of salt
- 2 tbsp lard, beef drippings or vegetable oil
Pasta/Alfredo Sauce

In the top of a double boiler, heat the cream over simmering water
- 1 quart whipping cream
- 1/2 # freshly grated Parmigiano Reggiano cheese
- 2 tbsp butter
- 3 egg yolks
- Pinch of white pepper
- Pinch of nutmeg
Salad/Grilled Vegetable Salad

Place all vegetables except garlic in a bowl
- 1 Japanese eggplant, sliced on the bias
- 2 zucchini, sliced on the bias
- 2 yellow squash, sliced on the bias
- 1 gree bell pepper, cut into 6 pieces
- 1 red bell pepper, cut into 6 pieces
- 3 whole garlic bulbs , cut in half
- 1/2 cup olive oil
- 1 tbsp fresh rosemary
- Salt and freshly ground pepper to taste
- 12 oz mixed greens
- Vinaigrette
- 1 tbsp Dijon mustard
- 6 oz rosemary flavored red wine vinegar
- 1 tbsp fershly chopped rosemary
- Salt and Pepper to taste

Vegetables/ Cabbage Rolls

Remove core of cabbage with boning knife and place it in a large pot of boiling, salted water
- 1 large head green cabbage
- 1 tsp vegetable oil
- 1/2 onion, finely chopped
- 2 clove garlics, finely chopped
- 1/2 pound lean chuck, ground
- 1/2 pound lean prok, ground
- 1 1/2 cups cooked rice
- 1 egg, lightly beaten
- salt and pepper to taste
- 1/2 tsp marjoram
- 1/2 tsp thyme

- 2 tbsp olive oil
- 1 #mild Italian pork sausage
- 1 large onion, finely chopped
- 1 large carrot, finely chopped
- 1 rib celery, finely chopped
- 2 cups cooked Great Northern white beans
- 1 large clove garlic
- 1 red or green pepper, seeded and chopped
- 1/4 cup chopped Italian parsley
- 1 tbsp finely chopped fresh basil
- 1 1/2 tsp finely chopped fresh oregano
- 3/4 tsp finely chopped sweet marjoram
- 1 (28 oz) can tomatoes packed in tomato sauce
- 3 1/2 cup beef broth
- 1/2 cup dry red wine
- 1/4 cup tiny soup pasta
- 4 cups coarsely shredded fresh spinach
- Salt
