Handling mangoes may irritate skin
- 6 cups unripe mango (about 3-4 large, hard mangoes)
- 1 1/2 cups diced red pepper
- 1/2 cup finely chopped yellow onion
- 1/2 tsp crushed red pepper flakes
- 2 tsp finely chopped garlic
- 2 tsp finely chopped ginger
- 1 cuplight brown sugar
- 1 1/4 cup cider vinegar (5 pr cent)
- 1/2 cup water
Sauce/Egg Sauce

In a small saucepan, melt 2 tbsp of butter
- 8 tbsp butter cut into 8 pieces
- 2 tbsp fresh lemon juice
- 1/3 cup heavy cream
- 1 tsp minced shallots
- 1/4 cup dry white wine
- 1/4 cup chicken broth
- 1/2 tsp hot sauce
- salt and freshly ground pepper
- 3 tbsp flat leafed parsley
- 2 hard cooked eggs, coarsley grated or chopped
- 1 tsp fresh chives
- 1 tbsp caviar
Seafood/City's Salmon with Cilantro-Coconut Pesto

Grind cumin in a mortar and pestle
- 1 tbsp whole cumin seeds
- 4 oz butter
- 1/3 cup lemon juice
- Salt and white pepper
- 2 cups coconut flakes
- 2 cups coconut milk
- 8 bunches cilantro leaves
- 3 bunches of mint
- 4 serrano chiles, finely diced
- 3 tbsp pureed garlic
- 1/4 cup olive oil
- 16 whole Swiss chard leaves
- 8-4 oz salmon filets
Sauce/Chipotle Salsa

- 5 large cloves garlic
- 6 small tomatillos, husked
- 4 plum tomatoes
- 1/4 large onion
- 1-3 canned chipotle chiles in adobo, seede and finely chopped, plus 2 tsp of the adobo sauce
- 3 tbsp chopped cilantro
- 1/2 tsp sugar
- kosher salt
