Chocolate Kahlua Walnut Tart

Preheat the oven to 375 degrees F
- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
- 3-4 tablespoons heavy cream
- 1 egg yolk
- 2 cups toasted walnuts, coarsely chopped
- 1/2 cup dark chocolate chips
- 3/4 cup packed light brown sugar
- 1/4 cup dark corn syrup
- 1/4 cup (1/2 stick) unsalted butter
- 3 tablespoons coffee liqueur
LEMON BURST MINI CAKES

Preheat oven to 350°F. Spray jumbo muffin pan with vegetable pan spray
- 1 pkg (18.25 ounces) white cake mix no pudding in the mix
- 1-1/4 cups water
- 2 tablespoons vegetable oil
- 3 egg whites
- 1 tablespoon lemon zest grated
- 1 tablespoon lemon juice fresh
- White Ready-To-Use Decorator Icing
- vegetable pan spray
- Toothpick
- raspberries for garnish

DATE-OAT MUFFINS

Preheat oven to 400°F. Coat 12 muffin cups with cooking spray
- 1 cup plus 2 tablespoons old-fashioned oats
- 1/3 cup chopped walnuts, (optional)
- 1 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 1/3 cup whole flaxseeds, ground
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 2/3 cup packed light brown sugar
- 3/4 cup buttermilk (Or make “sour milk”: mix 1 tablespoon lemon juice or vinegar to 1 cup milk.

- 2 teaspoons instant espresso powder, or granules dissolved in 1 tablespoon hot water, divided
- 1 tablespoon light corn syrup
- 1 large egg
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 5 tablespoons confectioners’ sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon unsweetened Dutch-process cocoa powder
- 1-3 teaspoons very hot water

- 12 oz cream cheese, well softened (use full fat)
- 2 large eggs
- 1/4 cup milk (preferably whole or 2%)
- 1/4 cup sour cream
- 1/2 tsp vanilla extract
- 1/2 cup Nutella
- For the topping
- 1 cup heavy cream
- 3 Tbsp powdered sugar
- 1/4 c chopped, toasted hazelnuts
- chopped chocolate or real chocolate sprinkles, for garnish
ALMOND RASPBERRY VINAIGRETTE

- 1/2 C. Almond Or Vegetable Oil
- 1/4 tsp. grated lemon peel
- 3 tbl. Lemon juice
- 2 tbl. Ground toasted almonds
- 2 tbl. Seedless raspberry jam
- 1 tsp. Dijon mustard
- 1/8 tsp. thyme
- Salt & pepper to taste
