Golden Butternut Squash Soup

Ingredients

  • 1 tsp canola oil
  • 1 small minced onion
  • 1 peeled and diced carrot
  • 2 (10oz) pkgs thawed butternut squah
  • 1 cup lf chicken broth
  • 1 1/2 cups evaporated milk
  • 1 tsp nutmeg
  • ground pepper to taste

Preparation

Step 1

Heat oil in a stockpot over med-high heat.

Add onion and saute for 3 minutes

Add carrot and saute for 3 more minutes.

Add the butternut squash and broth and bring to a boil.

Add the milk and simmer on low heat for 20 minutes.

Add nutmeg.

In batches, puree the soup in a blender until smooth.
Add pepper to taste.

Serve immediately
