Spicy Chicken Pepper Pasta

Ingredients
- 2 Tbsp. olive oil
- 2 boneless, skinless chicken breasts, cut into thin strips
- 3 cloves garlic, minced
- 1 carrot, thinly sliced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 19-oz. can diced tomatoes
- 1/4 tsp. red pepper flakes
- 1/2 lb. linguine
- 1/3 cup Parmesan cheese, grated

Step 1
Heat oil in a large skillet on medium-high heat. Add chicken and garlic; cook 4-5 minutes or until chicken is cooked through.
Add carrots, onion, bell peppers, tomatoes and red pepper flakes. Stir. Bring to a boil. Reduce heat to medium-low and simmer 8-10 minutes or until vegetables are crisp-tender.
Meanwhile, cook linguine.
Stir half the cheese into the sauce. Spoon over drained pasta. Top with remaining cheese and serve with additional pepper flakes.
