Ingredients

  • 4 Tablespoons butter
  • 8 ounces fresh button mushrooms, minced
  • 1/2 cup minced green onions, plus additional for garnish
  • 1 teaspoon minced garlic
  • 1/3 cup chicken stock
  • 4 ounces cream cheese, softened
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons minced fresh thyme
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • dash of ground black pepper
  • toast points, crackers or pita chips for serving

Preparation

Step 1

Melt butter in a medium skillet. Add mushrooms and saute 2-3 minutes. Add green onions and garlic and sauté 1 more minute.

Add chicken stock and cook over high heat until all the liquid is absorbed.

Transfer to small mixing bowl and cool to room temperature.

Fold cream cheese into mushroom mixture, then add Worcestershire thyme, lemon juice, salt and pepper.
Place into a 1-cup mold lined with plastic wrap and chill at least 30 minutes and up to 3 days.

When ready to serve, unmold pate onto platter, sprinkle with additional green onion, and surround with toast points, crackers or pita chips.
