Sausage Soup

Ingredients
- 1 Tbls olive oil
- 1 onion
- 1 pepper
- 1 lb. bulk spicy sausage
- 2 cans chicken broth
- 1 cup rice
- 1 cup half 'n half creamer
Details
Preparation
Step 1
Dice onion and pepper. Cook in olive oil. Add sausage and cook.
In large pan add 2 cans of chicken broth plus 1 cup of water. Bring to boil. Add rice and cook until rice is done.
Add sausage mixture to chicken stock and rice. Continue to simmer.
Before serving add 1 cup of half and half creamer.
Half-n-half substitutes:
4-1/2 tbsp melted butter then add enough milk to make one cup or
2/3 cup milk plus 1/3 cup heavy cream or
1 can of evaporated milk
