Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1.5 sticks (3/4 cup) room temp butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1.5 tsp vanilla
- 1/2 cup mashed ripe banana (1 large)
- 1 cup rolled oats
- 8 oz semisweet chocolate, chopped
- 1/2 cup chopped toasted walnuts

Step 1
Preheat oven to 375. Whisk together flours, salt and baking soda. Put butter and sugars into bowl of mixer, beat on medium until fluffy. Add egg and vanilla, mix until combined. Mix in banana. Add flour mix, beat until just combined. Stir in oats, chocolate chunks, and walnuts.
Using a medium ice cream scoop, drop dough onto baking sheets lined with parchment paper. Bake cookies, rotating halfway, until golden, 12-13 minutes. Let cool 5 minutes before transferring to wire racks to cool completely.
