Crispy Pork & Kimchi Pot Stickers
Ingredients
- Sauce:
- 1 t sesame seeds
- 1/3 C soy sauce
- 1/4 C rice vinegar
- 2 T water
- 1 clove minced garlic
- 1 scallion, thinly sliced
- Dumplings:
- 1/2 lb. ground pork
- 1/2 lb kimchi, drained & finely chopped
- 4 scallions, green parts only, thinly sliced
- 1 large beaten egg
- 2 T cornstarch
- 1/2 t sugar
- 1/2 T soy sauce
- 1/2 t kosher salt
- 1/4 t pepper
- 36 gyoza wrappers
- 2 T oil
- 1 C water

Preparation
Step 1
Make the sauce: In small skillet, toast sesame seeds over mod-hi heat 30 sec, shaking pan, til slightly browned. In small bowl, stir soy sauce with vinegar, water, garlic, scallion & toasted sesame seeds.
Soy Ginger sauce:
Combine 3 T soy sauce, 2 T rice vinegar & 1/8 t. ground ginger.
Chinese Mustard Sauce:
In saucepan bring 1/4 C water to boiling. Combine 1/4 C dry mustard, 2 t olive oil & 1/2 t salt. Stir water into mustard mixture.
Make Dumplings: line large baking sheet with parchment paper. In large bowl, combine ground pork with kimchi, scallions, egg, cornstarch, sugar, soy sauce, salt & pepper. Mix thoroughly using hands.
Place teaspoon of filling in each gyoza wrapper and crimp edges.
Heat 2 T oil in large skillet til very hot. Set 1/3 of pot stickers upright in skillet, making sure they are not touching. Cook, uncovered, in hot oil @ 1 min & bottoms are light borwn. Craefully add 2/3 C water. Reduce heat; cover & cook ! 10 min. Uncover & cook for 3-5 min til all water evaporates. Add 1 of oil to skillet; lift & tilt skillet to spread oil. cook pot stickers, uncovered, for 1 min. more. Gently remove from skillet & keep warm in 250 oven.
