Ingredients

  • For the rub:
  • 5-6 lb rump roast
  • 1 can chopped green chilis
  • 3-4 shallots sliced
  • 1 T. ground cumin
  • 1 T. garlic powder
  • 2 t. paprika
  • 1 T. green chili powder
  • 1 T. dried cilantro
  • 1 T. dried oregano
  • 2 t. sea salt
  • 2 t. pepper

Step 1

Mix all rub ingredients and rub on cleaned, dried roast. Place roast in roaster on a rack and top with shallots then green chilis.

Cook at 275 F for 3-4 hours.
