Ingredients
- 3/4 lb. turkey breast
- 3 green onions
- 1 red pepper
- 1 garlic clove (minced)
- 2 T soy sauce
- 1 tsp. cilantro
- 1 T honey
- 1 1/2 tsp curry powder
- 1 tsp. Oriental sesame oil
- 1/2 tsp. cornstarch
- 1/4 tsp. crushed red pepper
- 1 T oil

Preparation
Step 1
Shred turkey meat, thinly slice onions, cut red pepper into 2 inch matchstick strips. In small bowl, mix garlic, soy sauce, cilantro, honey, curry powder, sesame oil, cornstarch, crushed red pepper and 1/3 c water until well blended. In skillet over high heat in oil cook green onions and pepper until they are tender and golden. Stir in liquid mixture and shredded turkey and cook stirring to coat turkey well, until heated through. Serve with parsley rice.
Parsley Rice:
In pan heat 2 c water to boiling, heat 1 c regular rice, 3/4 tsp. salt and 1/4 tsp. pepper to boil. Reduce heat, cover and simmer 20 minutes or until rice is tender and liquid is absorbed. Stir in 2 T parsley.
