Ingredients

  • 1 lb of ground Italian sausage (mild)
  • 1 small onion
  • 2 tbs olive oil
  • 2 minced garlic cloves
  • 4 c. chicken broth
  • 1 can (drained) white beans
  • 2 15 oz. can diced tomatoes, undrained
  • 1-2 c. elbow macaroni or other small pasta
  • salt and pepper to taste
  • 3 c. fresh spinach, cut in strips
  • parmesan cheese to taste

Preparation

Step 1

1. Brown and crumble sausage and set aside.
2. Saute onion in oil until tender and then add garlic for a minute or so.
3.Add liquid, beans, tomatoes, macaroni, sausage, and salt and pepper; bring to a boil.
4. Cook for about 10 minutes or until pasta is tender.
5. Add spinach. Cook a few minutes until it wilts.
6. Serve it up with parmesan cheese.
