French Dip Roast Beef Sandwiches

Ingredients
- 1 medium onion, sliced
- 2 cups beef broth
- 1/4 cup soy sauce
- 1 tbsp. Worcestershire sauce
- 1 tbsp. Dijon mustard
- 3 cloves garlic, minced
- 3-4 peppercorns or 1 tsp. pepper
- 1 bay leaf
- 1 tsp. dried thyme
- Salt to taste
- 3 lb. boneless beef bottom roast

Preparation
Step 1
Place sliced onions in the bottom of a crockpot. Salt both sides of roast and place on top of onions. Mix remaining ingredients and pour over roast. If roast isn't covered, add enough water to almost cover meat in liquid. Cook on high 4-6 hours or low 10-12 hours. Remove meat from liquid. Let stand 5 minutes and slice thinly across the grain. Serve meat in a sandwich with a small cup of the au jus to the side.
