Turkey Meatloaf

Don't let the 'meatloaf' part scare you. Very good and a lot healthier than your everyday version.

Ingredients
- 2 large onions, chopped
- 1/3 C. Worchestershire sauce
- 3/4 C. chicken broth
- 1 1/2 tsp. tomato paste
- 5 lb. ground turkey
- 1 1/2 C. bread crumbs
- 3 eggs
- 2 tsp. kosher salt
- 1 tsp. fresh thyme
- Extra Virgin Olive Oil

Preparation
Step 1
Cook onion and thyme in oil, salt, pepper until translucent. Add Worchestershire, chicken stock, and tomato paste. Mix well. Allow to cool to room temperature. Combine turkey, bread crumbs, eggs, and onion mixture. Mix well and form into loaf-shape on baking sheet. Spread ketchup on top of loaf. Bake in oven for 1 1/2 hours at 325 degrees.
*Fill an oven-safe pot with water and place underneath meatloaf rack to avoid cracking.
