Ingredients

  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 can (15 1/4 oz) while kernel corn, drained
  • 1 can (10 oz) diced tomatoes and green chilies, undrained
  • 1 jar (7 1/2 oz) roasted red peppers, drained and diced
  • 2 plum tomatoes, chopped
  • 1 medium red onion, finely chopped
  • 4 green onions, finely chopped
  • 2/3 cup minced fresh cilantro or parsley
  • 2 garlic cloves, minced
  • 1/3 cup orange juice
  • 1 tsp ground cumin
  • 1 tsp grated orange peel
  • 1/8 tsp coarsely ground pepper
  • Tortilla chips

Step 1

In a large bowl, combine the first 13 ingredients. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.
