Ingredients

  • ¼

    cup butter

  • ¼

    cup onion, chopped

  • 1

    tbsp fresh lemon juice

  • 1

    tbsp Old Bay Seasoning

  • cup crushed Ritz crackers

  • lb fresh jumbo shrimp, peeled and de-veined

  • Parmesan cheese, grated

Directions

Saute onion, lemon juice and Old Bay Seasoning in butter, about 2 minutes. Remove from heat, add crackers and toss lightly. Stuffing should be buttery, but dry and flaky. Butterfly the shrimp and spread open, lay shrimp in a ciruclar pattern in the bottom of a 10 inch pie or quiche pan. Spread stffing on top of the shrimp. DO NOT pat down. Stuffing should be light and delicate. Sprinkle with parmesan cheese. Bake in 350 degree F oven for approximately 20 minutes. Do not overbake.
