Black Bean Soup

Ingredients
- 2 T butter
- 1 medium diced onion
- 1 celery stalk rough chopped
- 1 carrot rough chopped
- 1 chipotle pepper in adobo chopped (chipotle peppers can be hot - you may reduce to taste)
- 1-2 garlic cloves minced
- 1 tsp coriander
- 1 tsp cumin
- 1 T orange juice
- 1 tsp lime juice
- 1-8 oz can black bean with liquid
- 1 cup vegetable stock
- 1/4 cup cilantro finely chopped
- salt to taste

Preparation
Step 1
1. Add butter to the pot and cook onion, celery and carrot for about five minutes until onions are clear and translucent.
2. Add chipotle pepper, garlic, coriander and cumin.
3. Add beans.
4. Add vegetable stock.
5. Add salt to taste.
6. Cook for about 15 minutes. Remove from heat and add cilantro.
7. In blender puree half of the pot and return.
8. Check for seasoning and serve.
Note: Garnish with tortilla strips - make thin slices of tortilla and place in pot of 350 degree oil for a minute or two until golden brown. Remove to absorbent towel and sprinkle with salt if desired.
