Ingredients
- Coating:
- Salt
- 1 tbls of flour
- 1 tsp of corn starch
- 2 tbls of melted butter
- 1/2 tsp pepper
- Sauce:
- 2 tbls chopped onion
- 1 tsp flour
- 1 cup chicken broth
- 1 tsp lemon
- 1 tbls butter
- 1 tblsp chives

Step 1
Place chicken in 9x13 in. baking dish. Poke the thick end of the chicken with
a fork 4 or 5 times so the salt will penetrate the meat. Salt each piece both sides with 1/2 tsp of salt
Cover with foil and cook in a 275o oven about 30-40 mins. til it reaches a temp. of 145-150o. While the chicken is cooking, make the coating. Remove chicken and place on paper towels to remove moisture.
Put 1 tblsp oil in a pan and heat over med. heat.
Put coating in a shallow dish and coat both sides of each breast with the coating. Lay the basted side down in the skillet and cook for 3 to 4 mins. Baste the other sides and flip the chicken. Cook to 165o. Remove to a plate.
Add 2 tblsp. onion to the bits in the pan. Mix in flour to make a paste. Add chicken broth and stir and simmer for 3-5 mins. while it thickens. Pour in pan juices from the plate that the chicken is on. Mix. Add lemon juice and butter. mix. Pour over chicken and serve.
